need advice/opinion

Good morning...I have a scenario I would love realistic feedback on... I have been veggie for 20 years and thoroughly enjoying the 21 day kickstart..truly not that much of a stretch for me...I do love cheese but found some great substitutes. Being Italian and loving true artisanal cheeses such as homemade ricotta and mozzeralla, of coure without rennant, I am in a conundrum with an upcoming dinner engagement. We are going to the Culinary Institute of America in Hyde Park, NY for an Italian dinner at their reknowned restaurant. I am totally committed to the 21 day kickstart however my tastebuds would love to try some of their homemade cheese without feeling guilty. My intent is just a taste because we will likely not do this again as it takes so long to get a reservation; I would love realistic opinions, not textbook, on what you would do: partake in a temporary indulgence or forego. It has been planned as a romantic dinner and then we are taking a artisan bread baking class there for fun. So what would you do if you had to decide? Thanks!

Honestly, I would probably taste the cheese. One of my Dr. McDougall books says that he eats a bit of turkey at Thanksgiving. If that's okay for Dr. McD., I think it's okay for you.

I am vegan for ethical reasons primarily with the nutritional benefits as a nice bonus. Knowing about the realities of the dairy industry would keep me from ever knowingly consuming cheese.

I was never a big cheese lover so it wouldn't be a huge temptation for me. When I first when vegetarian one of the things I loved and didn't want to give up was the occasional filet mignon in a really great restaurant. I was vegetarian about 6 months when I was on vacation, at a 5 star restaurant and of course they had an awesome sounding filet mignon. I had it, enjoyed it immensley, and called it "my last hurrah!" I've not had a bite of meat since and that's been almost 8 years. I don't think there is any right or wrong answer to your question. It's a decision you have to make. You could decline totally, or make it your last hurrah! The fact that you are hear speaks to the fact that you want to get rid of cheese, the question is when.

I would probably taste the cheeses that looked interesting to me. I'd also check/ask about where they get the dairy products (I'm guessing they'll be using more than just cow if they're making artisanal cheeses - goat, sheep, who knows what else). Many artisanal/high end cheese makers do not get their dairy from factory farms. They tend to prefer grazed, grass fed, hormone/drug free sources because it affects the quality/flavor/texture of the end product. Whether one chooses to consume dairy or not is a personal choice. What tends to irritate me about some in the vegetarian/vegan community is the assumption that people who choose to consume dairy have not looked at where their dairy comes from. There are some who do and some who don't. Just as there are some veg folks who don't look into where they get their soy products from (soy is one of the most highly GMO crops in the US). --Deb

Each of us needs to decide for themselves where they draw the line. Follow your heart. Enjoy your romantic evening, with or without cheese, as you decide. Life is too short. Remember, too, that it's OK to work toward a goal in stages, knowing that, eventually, you will be more likely to reach that goal if you do it your way.

thank you so much for your thoughts...yes these cheeses are from small local farms that have their own dairy cows so I feel better about that as I have seen some of these farms and they are not factory cows for sure. Yes doing things in stages is right and the link from vegan outreach also made a lot of sense too..thank you for that. Will play it by ear but I am confident that my choice will be the right one and will give myself permission to partake or not as you all made me feel good about it. Good luck! If I had to indulge, I would make sure that it came from a local farm. My sister has an Italian restaurant, I KNOW how hard it is to resist these things!

speaking of Italian restaurants...anyone have a good, cheeseless lasagna recipe? Hubby currently makes a "famous" spinach and mushroom lasagna (homemade whole wheat pasta - he grinds the wheat fresh) but obviously, that has cheese. I don't know that there'd be any way to replicate the texture of ricotta and mozzarella so it might be best to try something totally different but still along the same lines. Anyone? --Deb

thanks! it might be a start. One thing that is a problem is that I cannot tolerate soy in tofu quantities. I'm also not sure about how having both polenta and pasta in the same dish will affect my blood sugar levels (I'd have to try it and see). It's so frustrating sometimes seeing all these really wonderful looking dishes only to see that it relies heavily on soy products (tofu et al) to mimic cheese. (sigh) --Deb

There are some really good rice cheeses out now. They melt well and I think would cook great in a lasagna. I can't remember a brand name but I have bought them at Whole Foods.

thanks. I'll keep an eye out for rice cheeses. The almond cheeses we've found use casein - sigh. I'm hoping the rice cheeses don't fall back on that. --Deb

I'm looking at the package, I see no casein. "Galaxy Nutritional Foods" "Rice Vegan Pepper Jack Flavor" "Rice Vegan Slices" Dairy & Soy free, cholesterol & lactose free, made for melting, excellent source of calcium. Bought it at Whole Foods Market.

Thanks! I'll have to look for it and ask for it if I can't find it where we shop (there's no whole foods closer than 45 minutes, trader joe's is even further, but the vegetarian food co-op/market we shop at can probably get it if they don't have it) --Deb
