Cheese help

Not so much the taste but the melty texture. Anyone know of a good non-soy cheese like substance that works for things like pizza topping? (or point me to an older thread if this has already been discussed) or for "mac'n'cheese"

We did find a reasonably melty almond milk based cheese but that has casein in it, so that's out. Some of the other options we've found are super high in salt (to the point that it's unpalatable to us, since we use very little salt in anything).

I have not tried it, but Follow Your Heart says on its packaging that it melts ... and I believe it is vegan.

Thanks, I'll have to check it out. Often, though, the vegan cheeses (even the melty good ones) are soy based and I cannot tolerate that much soy. We're gradually weeding soy out of our kitchen entirely. Currently, we have about 10-12 products total that contain soy, mostly soy lecithin as an emulsifier.

Just went and checked it out - contains soy in two forms tofu and soy protein. That would overwhelm my system to have that much soy (even in just an ounce or two that you'd use as a topping for instance).

(sigh) one of these days I'll invent something Wink

This cheesy sauce is great for mac n cheese Smile

Cheesy Sauce

1/4 cup raw almonds or raw cashews(cashews are softer, so may work better in some blenders.)
2 cups water
1/2 - 1 tsp. salt (or less to your taste)
1/4 cup nutritional yeast
1 tsp onion powder
1/2 tsp garlic powder
3 Tbsp cornstarch or arrowroot powder
1 tsp - 1 Tbsp. lemon juice to taste. (More makes it a sharper cheese flavor, less a milder flavor)
1/3 cup roasted or fresh red bell pepper (optional for color)
Option: blend 1 tsp canned jalapeños for a great nacho-style cheese.

1. Blend all ingredients until smooth.
2. Pour into a saucepan and bring to a boil while stirring constantly.
3. It will thicken to nacho cheese consistency. Serve hot.

•This is great as a dip for chips, over taco salad, on tacos or burritos, over vegetables, and over baked potatoes.
•I love sautéing veggies, pouring cheesy sauce over the veggies, then serving the cheesy veggies over baked potatoes. Yummy!
•Add to broccoli soup for broccoli-cheddar soup.
•You can also use this over macaroni for macaroni and cheese.


Nutritional Info for ¼ cup sauce   
45 calories
2 grams fat
0 mg. cholesterol

Mmm that sounds doable...need to remember the nutritional yeast when I go shopping next time. That seems to be a key ingredient in a lot of stuff.
