If you are concerned about sodium, then you can certainly adjust the recipes accordingly. Leave out the salt, use fresh instead of canned, choose low-sodium condiments, etc. You can substitute any spice or herb you think would work in the dish for more flavor. I've used hot peppers, garlic, onion, cumin, etc., instead of salt, and it was really good! The maximum amount of sodium recommended in the diet is 2300 mg (that's about 1 tsp of table salt) per day. The American Heart Association recommends 1500 mg per day if you have high blood pressure or are at high risk for high blood pressure. I hope that is helpful.
