recipes with high sodium content

I have found several recipes from the 21-day vegan kickstart program that are very high in sodium. As a person who is sodium sensitive, I cannot use these recipes and question why they are being listed as "healthy".

Same goes for many of the restaurant food. Chinese food is high in sodium. In my area, the brown rice is really white rice with soy sauce. Sad

Not everyone is sensitive to sodium or needs to watch their levels. You are always free to reduce sodium to levels that are comfortable for you.

I understand that not everyone is sodium sensitive; however, unless someone has low blood pressure and has been advised to eat salt, sodium intake is something we all should be watching.

Not doing so can lead to hypertension which can lead to heart attack and stroke.

Just under 1000 mg of sodium in a salad (I assume it's coming from the no-fat dressing mentioned) is way too high.

I look at all the nutritional facts - I'm just saying that others should be looking at this one too.

Wow--that does seem very high. Dr. Fuhrman's plans limit people to "around or below 1000mg a day." (He recommends this not just for people with hypertension but because excess sodium, in his opinion, *will* lead to hypertension and increase the risk of stroke if consumed habitually over one's lifetime.)

I'm in the habit of cooking without salt and either using an organic no-salt seasoning (herbs and citric acid, mainly) or salting lightly at the end. And for stuff that calls for soy sauce I get a reduced sodium one.

I've never had high BP but before we both cleaned up our diets and lost a bunch of weight, my husband did. (He lost about 60 lbs and I lost almost 40.) It's fine now, but I stayed in the habit.

It does make eating out a shock sometimes. Your tastebuds adjust and some restaurants just really go overboard!

If you are concerned about sodium, then you can certainly adjust the recipes accordingly. Leave out the salt, use fresh instead of canned, choose low-sodium condiments, etc. You can substitute any spice or herb you think would work in the dish for more flavor. I've used hot peppers, garlic, onion, cumin, etc., instead of salt, and it was really good!

The maximum amount of sodium recommended in the diet is 2300 mg (that's about 1 tsp of table salt) per day. The American Heart Association recommends 1500 mg per day if you have high blood pressure or are at high risk for high blood pressure.
