Gluten-Free, Potato Artichoke Casserole

Hi Gang, I made a new recipe today that was pretty easy and tasty. Got it from the www.livingwithout.com website. I subscribe to their newsletter. They have a magazine for people with food allergies. Some of the recipes are vegan and pretty tasty. I have some "wheat/gluten" issues as well. So always, glad to get a good recipe that's gluten free too. http://www.livingwithout.com/recipes/-1992-1.html Here is how I made it and what substitutions, brands etc. I used. I cut the recipe in half and made in an 11" x 7" pan. It's just my husband (non-vegan) and I. He may or may not like this one. I tried it earlier and like it. Used "Follow Your Heart" Brand Jack cheese grated for the cheese. (first time I tried it and one of the better cheese substitutes I've tried) I used almond milk for the milk choice "Mrs. Dash" Garlic & Herb Seasoning instead of the thyme for seasoning Used a little fresh parsley and some fresh chives from my herb garden Instead of the gluten-free cracker crumbs. I crushed up some of my favorite miniture rice crackers from Trader Joe's *** Next time I would boil the fingerling potatoes whole and cut up into bit size pieces. Then would mix the artichoke mixture, pototoes and the sour cream mixture "all together" before putting into the pan. I will also make a little more of the sour cream/non-dairy milk mixture so it will be a little creamier. I think this recipe would be a good one to take along to a potluck and even the non-vegans would enjoy it too. Will let you know how the Non-veg husband responds to it tonight.
