Am I eating too much starch???

I start the day with a big bowl of oatmeal with almond milk. I have fruit a couple hours later.
Lunch I have a brown rice tortilla bread with Hummus, avacado, tomato and cucumbers.
A couple hours later, I have some fruit.
Dinner I have 2 slices of bread with
peanut butter, banana & a glass of
chocolate almond milk.
Fruit after.

Am I eating ok to lose weight??

Sounds okay except I think you need more veggies in your diet ... veggies of all kinds. Green leafies, peppers, the whole nine yards.

To me, that sounds like way too much starch, not nearly enough vegetables. Probably too much fat, as well, using all that avocado and peanut butter. The fruit is a good choice, but if you're using chocolate almond milk, it has a LOT of added sugar, which is not good for weight loss, and it raises blood sugar levels. Bananas are an ok choice for fruit, but they are high in calories and sugar. Some other fruit choices would be better, like strawberries or plums or citrus fruits.

If you really want to lose weight, stick to lots of leafy green vegetables. Other hard vegetables are okay, too, like zucchini, celery, okra, eggplant, tomatoes, carrots, jicama, etc.

Are you using the food plans and menus that the Kickstart sends out? They are there as a resource to you! They're very healthy.

John McDougall just gave an hour and a half presentation on starch at his Advanced Study Weekend in Santa Rosa. We are designed to live on starch. In fact, he is writing another book and it is about starch. Much of the world has lived on starch based diets to good effect. He even mentioned an example of people existing quite healthily on a diet of potatos alone. As long as we get our B12 vitamin, we can safely consume corn, rice, beans, oats, and all kinds of starches and lose weight while doing so.

There's not much nutrition in regular potatoes. If a person wants to live optimally, to thrive and be truly healthy, they would do well do eat a truly balanced diet, including the 4 food groups suggested by PCRM's Power Plate, and not focus too much on any one area. Focusing so much on starch, as Dr. McDougall suggests (and I have a lot of admiration for him, don't get me wrong) may encourage one to exclude other foods and vital nutrients. Vegetables like leafy greens contain many more nutrients per calorie than do the starchy vegetables. You're correct that we can safely consume starches – in moderation – and still lose weight. But if one's goal is mainly to reduce weight, as the original poster suggested, one may want to gear one's diet toward the above-ground vegetables, rather than the root vegetables, and other starches.

My 2 cents would be that if you can incorporate more fresh and even frozen veggies into your plan, of all kinds, it will be nutritionally better for you, and you will lose weight.

I'm diabetic, and came to PCRM after having faithfully followed the ADA diet, to no avail. I was losing weight, but was always craving, and my blood sugars weren't dropping fast or low enough. So when I could now eat starches that I hadn't been able to eat more than a few nibbles of before, it was easy for me to fixate on them, and forget my plate should have more veggies than starch for better nutrition.

So, I had my "day in the sun" so to speak, and this time around, I'm filling up on those leafy green, yellow, purple, orange, etc, etc, nutritional power houses. If at first one doesn't succeed, try, try again. Or something like that! Very Happy

You can do this. Go back and re-read some of the material and menu's, etc, and see if you can find some recipes that have the veg's in them that you'll enjoy.

Oh, the peanut butter. Crying or Very sad I know, I love it too. Lots of fat.Shocked Sorry...and the darn stuff is soooo good. But it will go straight to the hips and clog up the arteries...neither option a good one!

Hang in, and this will become easier for you!

It depends on how you make it. Are you adding olive oil and a lot of tahini? Or it is just chickpeas, lemon juice, and garlic?

Well, if you're really trying to lose weight, probably not. It most likely contains olive oil and tahini, which would take you well over the 3 grams of fat per serving that PCRM recommends you stay under.

Once again, you should really go back and read the Kickstart menus. Use the recipes that are provided. They are good, easy and very healthy. They will provide you with all the nutrients you need, and you won't have to rely on all that processed packaged food from Costco or places like that. Eat more fresh vegetables, and the recipes from the Kickstart. That's the better way to weight loss, not just trying to "fake it" by putting together your own plan.

If you really want to do the Vegan Kickstart, then do it. So far, it looks like you're just fiddling around with it, coming up with your own menus and then asking us if what you're doing is okay. That's not really following the Kickstart.

Dr. Barnard's diabetes book has a great hummus recipe in the back. That's the one we use, we substitute roasted red peppers for spinach most of the time (we all love roasted red peppers and get leafy greens other places so that works for us, we just use the substitution as indicated in the recipe notes)

Hey devasha!

Good for you for trying this out Smile I am also trying to lose weight and I, like you, love my hummus and nut butters Wink tee hee!

You have done a great job of pulling out the animal products and that is a huge leap in the right direction. I would agree with the others above that you might consider adding some veggies into your daily plan. I try to eat three veggies to every fruit that I have. I will give you some examples:

For breakfast, with your oatmeal you could try a veggie plate or if you are more of a sweet person for breakfast, skip the veggies there but add a few berries to your oatmeal and then have some carrots, celery and peppers for your snack instead of fruit.

For lunch, try making your own hummus. In a pinch, and of course while getting your bearings on this program, you could use the store bought hummus but I think that you will find that making your own hummus will be so much more satisfying. Use the recipe the PCRM provides and then add some yummy stuff to it. I will roast up my own red pepper, or a tomato and basil. Your sandwich will jump in your mouth.

For dinner, try some grains like quinoa or brown rice, even brown rice pasta! Add some kale and chop up peppers, onions and mushrooms and add a little tomato sauce and you have yourself a feast.

I love my nut butters, my hummus and my avocado but I have found that for weight loss I have to stick to one avocado a week, nut butters every couple of days. I do have hummus pretty much every day but in small amounts and the recipes without oil.

This is a learning process for us all, new and experienced. (notice I didn't say old???)

I will chime in and say I LOVE avocado, nutbutters, hummus and even my glass of almond milk prior to my morning walk.

That said? If I want to lose I need to "shelf" these foods until I am ready for maintenance instead of "weight loss."

I also struggle with getting enough green veggies. I have no clue about greens and haven't been terribly fond of many I have had. I seem to appreciate them better raw but still. I have snuck kale in a white bean soup, I have snuck some in smoothies.

I snack on artichoke hearts, carrots, chickpeas, fruit, etc.

When I am not working 2 jobs and have more time, I will experiment once again with more recipes. Right now it is all I can do to get through the week with my work. I realize though, that this is just a part of my journey. There will be changes as we go along
but the thing to remember is to keep on. You can't learn and move forward without effort.

New things are tough to learn. I am so pleased to see all the newbies here and encourage them to ask away and keep trying! That is how we learn what works for us.

I'm sorry I was rude. I didn't mean to offend you. It was my perception that you were not trying the Kickstart, but only looking for diet tips and asking lots of questions that could have been answered just by reading more. Obviously, the other posters have been much more generous with their knowledge and time.

You're right that the boards are here to help. I'm sorry that I was so short with you. I hope I haven't made your experience here a negative one.

Devasha, this isn't my first kickstart and I struggled a bit at first adding non-starchy things to my diet. I don't know about you, but I generally live off of one-pot dishes. I found the DIY: grains, beans & a green dish and the Southern beans & greens dish both really flexible and easy to make. You could easily make a different variation of them every single night and with all three components you get a bunch of different vitamins and nutrients. It really helped me achieve at least a serving of greens a day.

Just to mix it up, on Southern beans & greens days, I make this cornbread recipe (disclaimer: it does call for added oil)
