Easy Bean Tacos

Wow! Talk about a simple recipe! The vegetarian refried beans were even on sale at Winco tonight when I shopped for 78 cents a can. I made two of them and I am stuffed. I can not believe how good they were with the green onions, the salsa, the roma tomatos. I used a cast iron skillet frying pan from my mom's days. Sensational, quick, filling and easy. Fits all my requirements. Did I mention tasty?

I started making my own tortillas last year, they are amazing! Wow what a difference, takes tacos to a new level to be sure.

A simple dinner of beans, tortillas, rice and such is just such a feel good meal. It has transitioned into one of my comfort food meals.

I made the easy tacos yesterday and they were terrific. I used a tiny spray of canola oil in the pan and they browned up just like quesadillas. Topped with tomatoes, shredded lettuce, salsa and some pickled jalapenos. So tasty. Definitely will put them in my weekly repertoire. Ten minutes start to plate.

Next time I will use spicy fat free refried beans and may add some peppers to the beans. Just to kick it up a notch.

there are two types - flour and corn. Flour tortillas are our go-to "bread" in the warm months. We use fresh ground whole wheat flour (we grind our own for the purpose). It's basically a flour and water type dough (recipes abound online). It gets cooked in a dry very hot skillet (no oil or spray on stuff on the pan - that's important for them to come out correctly, if they stick to the pan, it's not hot enough). They are also wonderful cooked on the grill or over a campfire! If you can make cookies or pancakes, you can make flour tortillas. We haven't yet gone far in the direction of corn tortillas because we really love the versatility of the whole wheat (burritos, tacos, wraps, etc - we even throw them in the oven to make crispy chips for dipping!)

I only make corn tortillas as I have Celiac and wheat is out of the question! So nice balance! Though when I did make my own flour tortillas, it seems as though I used a tiny bit of baking soda or baking powder. I can't remember.

Corn tortillas:
Maseca (ground corn) Safeway has it, but less $$ at a Latin store
Water
Lemon or lime juice
salt
can add seeds or herbs

For 2 or so tortillas, I use about 1/4 cup Maseca, just enough liquid to make a firm dough. Maybe a good tablespoon of lemon or lime juice and the rest water. I toss in just a pinch or so of salt. There is a recipe on the back of the bag with exact measurements.

I use a tortilla press. I don't like the aluminum one, I get the heavy iron one. Roll a bit of your dough into a ball about the size of a golf ball. I split open a large ziploc bag and press the dough in between the plastic (I line the press with the plastic and place the dough in between the layers. of ziploc) After pressing, (you don't need a lot of pressure) if you peel off the top layer of the bag, and lay the tortilla across your hand, then slowly peel off the the other layer.

I cook them on a hot griddle. Personally I use a comal which is just a thin metal griddle. Again, I purchased mine in a Latin store. I lay the tortilla flat across the palm of one hand, starting at an edge, above the comal, I sort of roll the tortilla off my hand on to the comal. I believe there is a video on the web that shows this process.

I also use a tortilla warmer to keep them warm until they are all done. All said and done, my Maseca, press, comal, and warmer cost about about $35.00. A bag of Maseca runs about $3.00 - $6.00 depending on where you purchase it. It lasts a long time and they are wonderful! Enjoy.

yes, we often will use a bit of baking powder (non aluminum low sodium variety, I believe it uses potassium insttead of sodium). It's not essential but it does make them a bit more flexible for wrapping.

Thanks for the corn tortilla recipe. We also grind our own corn meal (popcorn makes the BEST corn meal) so that's going to go on my list of stuff to try.

Maseca is quite a bit finer ground than corn meal, just an FYI.

I have added bits of other things to them and wow they are good! Like, garlic, sesame seeds, etc...
