Favorite Fast and Easy Foods

I am single, with one benefit that I don't have to cook for family. Then again, I don't end up cooking much for myself, either. I am on the go, like so many, and tend to like fresh foods that don't need much prep time. My two favorite things right now: Fistful of fresh spinach in a bowl. Nuke it for 30-40 seconds. Drizzle small amt of lowfat vinigrette or dressing of your choice. Eat with your fingers. I swear, I feel like I'm Popeye! Spinach is amazing stuff. It helps my mood, too, since I know I'm doing my body good. You can almost taste the energy in it. My other fave, though I have to limit my intake somewhat, is to cut an avocado in half, remove the seed and insert a couple of tablespoons of favorite salsa. (I'm hooked on a fresh mango peach salsa). It is so good I could almost eat the skin of the avocado. Instead I admire it and thank it for its beauty and nutrients, then add it to my compost bin. Other quick, healthy grabs?

I have found these amazing veggie potstickers which I now bake in my toaster oven instead of saute in oil. (Safeway Select brand) They are great little "finger foods" that are great to have in your fridge for those "grab and go" snacks, and they taste just fine cold.
All we are saying is "Give Peas a Chance"

6 minute lunch: Microwave a potato Top with a can of butter beans - rinsed and drained And a few shakes of nutritional yeast flake.

My quick grabs: Sandwich of tomatoes, avocados, and sprouts with tofu mayo Baked tortilla chips with mango salsa An apple Piece of toast with hummus or baba ganouj Cut-up bell pepper (any color) with hummus or baba ganouj I keep hummus around all the time when I can, because it's quick, low fat, and just the texture I want for a spread/dip.

I bought a box of clementines & now can't keep my hands off them! They are so yummy & easy to peel & eat! I've also made a trail mix with almonds, raisins, carob chips & walnuts that is really good. Also, bananas, peanut butter & jelly & popcorn rounds out my favorite quick & easy foods.

I love clementines and they are SO easy to carry. A friend gave me a salad container that she bought at Curves where she works out. It's a good sized bowl with a lid that holds your salad dressing and a piece of blue ice that you keep in the freezer. Makes it perfect to take a to-go salad or cut up fruit or veggies. It's big enough to have a good sized portion but not too big to carry. I love it. Great. easy tips from all! Having easy-access food is key for me, otherwise I get too hungry, start thinking there's "nothing to eat" and end up grabbing something on the run. More expensive in more ways than one! So far I've avoided this, but I know my patterns of the past and know that I need to have my healthy grabs around to keep me sane. Thanks for the great ideas from everyone here.

I bake corn tortillas a lot. I have a rack that can bake them into taco shells, but even just cutting them into sixths and having fat-free corn chips is fast and easy, and I always have beans on hand for a quick dip.

I make this each week and it re-heated for breakfast, lunch, or dinner...but I just really love it! It's probably something many of you make, but just in case... First I saute some onion w/water till it's really softened. Then, in a bowl, I combine a third of a can of veg refried beans, a whole can of black, beans, third of a bag of frozen corn, 1/3 of a medium jar of salsa, and the onions (I have also cooked mushrooms and zucchini w/the onions in the past to put in). I use a glass casserole dish w/a glass top and I put some enchilada sauce in the bottom and place a corn tortilla on it and brush enchilda sauce on it. I spoon some of the mixture on, then coat another corn tortilla and put more mixture. I usually use about 5 or 6 tortillas and I always add a little more sauce at the top layer as I like mine a little saucier. I bake at 350 for about 30-45 min. It's basically just dumping not cooking and it's quick and I love it! YUM!

I always keep a big yogurt container full of Bob's Red Mill organic multigrain pancake/waffle mix on hand. Then I take a cup and mix it with any appealing mashed up fruit or veggie, add a little water and fry them up using olive oil spray or coconut butter. Our favorite right now is microwaving any winter squash, scooping out the insides (~1/2 cup to 1 cup of pancake mix), and "frying" them in a little coconut oil. YUMMMMMYYYY! My 4 year old loves them. Super quick and easy, plus I freeze leftovers for snacks later in the week.

MJ- Ah, no, this piglet is not mine. I used to work on a farm and absolutely fell in love with pigs then. They are sweet, smart and loyal and so damn cute! My friend's name is Hamlet (named after Shakespeare, not meat!) Of course, others wanted to name the animals "Breakfast, Lunch and Dinner" How anyone can have such a disconnect after raising and caring for these beautiful creatures is beyond my comprehension. The farm where I worked was an educational center- no animals were slaughtered.

I bake them on parchment paper 375 for 10 minutes. They cook pretty quick and are great for tostadas, chips and even my own low fat taco shells.

We make this bean, corn and salsa mixture that we use as a dip, instead of salad dressing and we heat it up and serve it over whole grain pasta: 1 can black beans, rinsed and drained 1 can whole kernel corn, rinsed and drained 15 - 16 ounces of salsa Mix all of the above ingredients together and you're done. As a dip, we put it on whole grain pita or on corn tortilla chips We throw this on top of our salads instead of using salad dressing It's quick, easy and yummy.

My fav fast food is what I have for breakfast, but it's good for any meal of the day. A raw vegan green smoothie. It consists of a handful of spinach, afalfa sprouts, stalk of celery, banana, zest and juice of 1 lemon, a few dates or prunes, an apple or half a papaya, a couple Tbsp. hemp hearts, ginger root, and a cup & a half of water. Whizz it up in the blender til blended and creamy. Trust me, it tastes great, mom was dubious at first, but after she tried it, she said whenever I make it I have to make extra for her!

Wasn't sure where I should post this, but this seems like a good thread for it...since it's called "20 Minutes to Dinner"! Apparently it's all vegan, low-fat, and 20 minutes. Sounds perfect, right? http://www.veganappetite.com/2009/12/book-review-and-contest-20-minutes-to.html UPDATE: Apparently this book is not completely new, but is being rereleased in a new edition. Look for the 2010 copyright date or new cover. I haven't seen the book yet, but it's now on my list. Also, I read the author's blog. You might like to check that out here: http://veganfeastkitchen.blogspot.com/ Two other 30-minutes or less vegan books I do have and recommend would be "Quick-Fix Vegetarian" (note: it's all vegan, I think the publisher for some reason wanted to avoid saying that?) by Robin Robertson and "30-Minute Vegan" by Mark Reinfeld & Jennifer Murray. Neither is billed as low-fat, but neither is junky. And Murray puts several raw recipes in hers.

It takes a little advance time, but then is quick to grab. Make soup. 1 can of stewed tomatoes 1 can of vegetable broth 1 bag of frozen veggies, whatever you like Some greens, like spinach or chopped kale 1 can of beans, again, whatever you like Then add spices ... These all have great antioxidants ... Cinnamon (ok, maybe not in soup, but maybe), Ginger. Oregano, Red Pepper, Rosemary, Thyme, Yellow Curry Super easy, and you can put in smaller containers to grab for breakfast or lunch on your way out the door! I love soup, especially in the winter. I found a split pea recipe on this site that I'm making for dinner tonight! -- Lisa
