fresh start tomorrow

I only managed to make it through the first day then all my good plans fell apart. We ended up with a houseful of company, 9 extra people one of the days, so I gave up rather than stress myself out trying eat differently. Today there is finaly some extra room in the fridge for me to make a few things to have at the ready. Am making a fresh start tomorrow, have made a container of hummus filled with diced/minced veggies, so it is on hand and easily within reach. Will do a bowl of crudites in the morning to snack on through the day. Someone mentioned making their own tortillas in another thread, might look that up and give it a try. Going to get some bananas and make a few batches of oat waffles to keep on hand in the freezer. Somehow I'll make this all work!

I like to make all my guests vegan food to show them how delicious it can be! Burritos are always a crowd pleaser, or curries with vegetables and chickpeas.
If you are not vegan, go vegan - it's easy! It's better for you, better for the planet and most importantly it's the morally right thing to do for animals.

I have a sister in law who is vegetarian.. and her husband. We are thinking once i get up to speed we might do dinners at each others houses... so we can try new receipes.

We have friends who are not vegetarians, with whom we have dinner once a month, trading off houses. My friend tells me it forces her to stretch to prepare meals that are within our guidelines, and when it is my turn to cook, they enjoy the chance to try something new. My husband prefers if we do not cook meat in our home anyway, and I try to honor that request.

Did fine yesterday, sofar, so good today. Not sure what my food plans are for today, but still have a good amount of hummus on hand.
