Some Questions re: Fat and Chocolate

Hi All,
I'm going to be starting the Kickstart and I can't wait! I signed up for the Jan Kickstart but that fell right when I was making a very stressful move so I didn't stick with it. Now I'm more settled so I'm planning on doing the 21 days straight through Smile.

I had a few questions in looking over the PCRM resources and 21 Day KickStart website. I know that PCRM is very much about low fat and I don't see fats mentioned anywhere. However, I do notice that in recipes for the kickstart there are small amounts of oil or nuts/seeds. So does that mean that small amounts of either are fine for the kickstart?

Also, I'm a huge chocoholic and I'm trying to cut that out for the kickstart. I have a fudge that I make very simply with raw carob powder, nut butter, and dates. I use small amounts (like a tbsp of nut butter, a tsp of carob powder, and 1 date per serving) so I'm wondering if that's ok as a chocolate substitute or the kickstart.

Carob is a great option, as it is packed with minerals without some of the drawbacks of chocolate.

I have been making totally yummers dessert in my VitaMix with frozen cherries, frozen mango chunks, carob powder, and almond milk whirred up into a freeze. Does the ice cream trick without the fat and empty calories, full of good nutrition!

Hey Tam,
So glad you are giving it another go - I hope you enjoy the journey and that the messages/recipes are are helpful guide.

In terms of fat, we do recommend going low-fat vegan, which will be described in detail on Day 3 of the program with a webcast, and other supported literature/tips. We suggest people aim for 2-3grams of fat per serving as an aim for looking at foods with a label. And, we advise to avoid oils, avocado, nuts and seeds. Going low-fat is especially helpful for people wanting to lose weight, control diabetes and prevent disease.

the vita mix ice cream sounds fabulous, could you post a recipe? Sounds like you probably eye ball it, but just a general idea would be helpful!
