Dr. Barnard points out in the intro video that dairy, even the low-fat stuff, is mostly lactose. Lactose is a complex sugar that breaks down into two simple sugars, galactose and glucose. So that would explain the effect on your blood sugar, wouldn't it? Hope that's helpful! There are unsweetened plant milks like soy and almond available--I've come to prefer these myself. You'd know better about your own sensitivities, but maybe one of those would work better for you?
