Hummus is great on toast and gives you a protein kick in the morning. Try mashing a banana (with or without a little agave if you have a sweet tooth) and using that as a spread. You can also do that with an apple cooked in the microwave until very soft, sprinkle with cinnamon. OMG. Tofutti makes a vegan cream cheese (get the nonhydrogenated version) but it's a processed food and still kinda high fat, so I don't use it much anymore. Great for transitioning though! Earth Balance is vegan and pretty tasty (though yeah, high fat and processed). I think not all of the Smart Balance varieties are, but some are, so be sure to check to make sure.
