Tess, we seem to have the same forum schedule today! I want to reassure you, the carbophobia as I call it is almost universal. That shows you how embedded misinformation has become in our culture. You make an important point about the quality of carbs as well. PLUS I wrote (I believe in the "honeymoon over" thread?) about initial gain that is not uncommon with the switch to more starches. Actually, I think it was in another thread about weight. I shared about my initial gain moving from a long time veggie diet to eliminating dairy and more dietary fats. Up a couple of lbs initally BUT I know now that it was due to increased fiber in the digestive tract (which would hold more water) as well as better hydration due to the carbohydrate content. This held for several weeks, actually, and then fell away along with a couple of more lbs. Now maintenance is easy with all the plants, rice, and potatoes I can eat. Transitions! Oh, the S.Powter thing was a gain disaster for me, too! Years ago. Partly due to the above and partly due to no real quality control. 411! Lani
