hoppin john salad

Hi I made the hoppin john salad last night. It was yummy. I know i am working some on last weeks menu but it is only me 24/7 and my husband at dinner. Anyhow.. just wanted to say it is a great receipe. It has light flavors and crunchy celery! very good. I also put a jalapeno pepper in there without the seeds of course. Did everyone else like that receipe?

Hi cch22, I've been concentrating on recipes I haven't made during the last two Kickstarts so I went back to my recipe card for Hoppin' John Salad and in pencil I'd written "Love it!" So I'm hearin' you on how good it is. During the last two Kickstarts I would try a recipe. If I liked it I'd print it off onto recipe cards and make a handwritten note if I changed it etc. I only printed off those I liked. So now I have to try to think if I've tried one before and didn't like it or just didn't try it. Not a perfect system!!  One thing about changing to this way of eating and cooking is the absolute slew of recipes you can collect. Linda

I don't have fresh parsley on hand but, have everything else. Do you think dried parsley would be ok? Don't want to ruin it on first experiment. What's the amount of dried I should use?

If you don't have the fresh parsley I think it would be absolutely fine to make the salad. At first just try leaving it out all-together. Taste.. Then if it is missing something, take a small amt of salad out.. and just put in a pinch of dried parsley.. taste.. if you like it better.. then i would start with just a teaspoon of dried parsley to the big batch... definately not the same as the fresh. Also with this recipe... If you put the dried parsley in... give it overnight to let the flavors settle and mix together. This is one of those kind of recipes that get better with just a little bit of time.
