NON DAIRY Eggs and Cheese Please

Are there any non-dairy eggs I can use to make french toast for my hubby? I was told that I can use soy/rice cheese to replace the usual cheese. So far so good. Breakfast was tasty!

I did a quick search and found numerous recipes, but these two look the best to me:

There were other recipes calling for flour or nutritional yeast, but they didn't look very appealing at a glance. Good luck and please let me know how they turn out. I think I'll try the banana one myself this weekend!

I've only been able to find one vegan cheese in my area. It's by Follow Your Heart. I've only seen the mozzarello and cheddar flavors, but I enjoy them both. You can check it out on followyourheart.com. Under "Products" select "Vegan Gourmet" then select the cheese. You'll be able to see ingredients and nutritional info. It's softer than regular cheese but is good in sandwiches and melts very well when combined with potatoes, veggies, or anything hot. Very creamy. One person at work told me that "Daiya" is exceptional. I've only seen it online, and it's available in 5 lb. bags for $40 plus whatever shipping might be. I don't have a problem with $8/lb. for good cheese, but 5 lbs. is A LOT for just me! The FYH is a 10 oz. pkg. and is regularly $4.79. It goes on sale fairly regularly for $3.79 so that's when I buy a few pkgs. They usually have a 3-mo. "use by" date. I was a CHEESEAHOLIC before I went vegan! I didn't find this cheese until I started shopping more at a local market rather than Safeway. I don't eat a lot of FYH since I got used to not having cheese, but it sure is a nice to know that I have this good alternative when I do want some cheese flavor!

Daiya is just sort of new. It's supposed to be available in human-sized packages at Whole Foods and other places starting this month. Or at least that's what they've been saying on their Facebook page! Smile

Amy's frozen foods are also now using Daiya in some of their products--but check the labels, because the soy cheese they used before was not always vegan. (Their boxes are clearly labeled with VEGAN as the first thing in the ingredients list.)

If you're up for making your own, The Ultimate Uncheese Cookbook by Joanne Stepaniak is great. I've had a lot of fun with that one.

The book "Vegan Vittles" by Joanne Stepaniak has a great vegan french toast recipe. It just uses non-dairy milk and flour I believe.

Vegan French Toast - there is a great recipe for this by Isa it involves soymilk and chick pea flour. You whisk that up and then soak your bread in it. Oh, cinnamon too. I think the chick pea flour adds a little thickening so it is more like eggy french toast. Smile
