What I Ate Vegan Today: Week 1

This thread was a wonderful one during the January Kickstart. While the recipes and meal plan are great, not everyone is going to do each recipe...so how are you "keeping it vegan" today? It's great to get inspired by what others are actually eating!

Great post! I'm a member of zootoo.com and one member started a 30-day vegetarian challenge last Sept. 1st. He asked each of us to set up our own journal and every day add to it. We were to list our meals, frustrations, road blocks, recipes, new discoveries, etc. No one was supposed to post comments on other's individual journals, but respond and discuss in the general daily journal. Worked very well! Of course, 32 "joined" but at the end, only 13 completed the journaling. I'm not quite familiar with this site's workings, but it seems like you've figured out how to set this up. I don't know how many people are actually doing this, so would it be better to set up one discussion per day, say "Open Discussion Day 1", etc.? One per week seems like it would get very long and harder to follow.

What I am planning to do today... B: strawberries and dry cooked hash-browns D: loaded salad and leftover potato-kamut-bean stew S (choices): air-popped popcorn, apple, homemade bean dip on rice cakes I have an unusual eating schedule because I wake up late and go to bed late. So two meals and two snacks work best for me. Eating is delayed today because we lost power for a couple of hours.

So let's give it a go this time...and see if it is the same. If it gets too long an unwieldy...I'll just start another thread. (I actually tried to start more specific threads in January, one each for breakfast, lunch, dinner, and snacks...and the general weekly thread got much more traffic.) People are more than welcome to set up their own threads for a personal journal, if they so desire...and they can just create their own threads when they have a question or a triumph. And please, everyone...comment where you'd like! (Here or on other threads.) I found the forum experience just amazing during the January Kickstart, which is why I am here again.

Can someone help me out? Is it possible to reply to an individual's post right under it, or is the "reply" button the only way? My "reply" may be way down the comment list, and the person I want to see it may not.

I had oatmeal with raisins and cinnamon and a glass of rice milk for breakfast. For lunch I met a vegan friend and we went to an awesome vegan/macrobiotic/organic restaurant. Every day they serve one menu only. Today included miso soup, salad, sea vegetables (my first time to try!), a quinoa dish, garbanzos, a yummy squash and carrot dish, and kale. Some were things I never would have thought of, and it was a good way to try out some new dishes. I usually take a lunch to work, so this was an unusual treat and a good way to start the 21 day challenge. Don't know yet what I will have for dinner, probably some fresh veggies, brown rice, and salad.

This stuff isn't expained in the user guide.

Breakfast:I had an apple and made Cinnamon Oatmeal with almond milk, tea Lunch: Couscous Confetti Salad but I really didn't care for it and Carrot and Red Pepper Soup Dinner: Hoppin’ John Salad and Kwick Kale Plan on a Snack: Toast with apple or banana 8 glasses of H2O

B.- half a soy yogurt over a cup of chopped apple,strawberries, and grapes, topped with 1/3 cup homemade granola ( This is so incredible, I'm obsessed with it right now, will probably have this every am until I tire of it. If you like cherries, the yougurt is Wholesoy cherry- only that one!) L.- w.w.wrap with 2 slices Fakin Bakin tempeh that I sauteed down with a little natural bbq sauce, topped with a little homemade cole slaw snack- a few org. blue corn chips, carrot sticks and 2 tbl. homemade hummus d.- vegan Kashi frozen entree (Mayan), sliced tomato, and few bites of cantalope Coffee this am, also, with Silk coconut milk plain creamer, and later, iced tea made with half green tea, and half fruit herbal tea bags sweetened with a little raw honey

Today went well. B-oatmeal with cinnamon, brown sugar, and soymilk L-sauted green beans over rice D-veggie gumbo (okra, tomatoes, corn, onion, bell pepper, and blackeye peas) Snacks-grapefruit and few peanuts

Didn't start until later in the day, but for dinner went off the meal plan with Spanish Rice with Kidney Beans & Green beans topped with cashews. Delish! Can't wait to start fresh tomorrow.

Just goes to show you. I made the couscous confetti salad and loved it. Have several days worth to eat so am so glad I liked it!! This is my second quickstart and nearly everything I made the first time I liked. A couple though I won't try again. I figure "why" when there are so many good things in the plan.

Morning: Tofu scramble with red onion, celery, and green pepper and a dash of balsamic vinegar to give it a "kick" Snack: 2 slices sprouted whole grain bread with apple butter Lunch Whole grain couscous and "roasted" cauliflower, zucchini, and red onion Dinner: Salad with lettuce, red bell pepper, and shredded carrots and lemon juice; baked potato with topping of salsa and canned crushed pineapple Snack: rice cakes with natural jam, dried fruit Lot of water! My husband and I both started the 21 Day Vegan Diet today. I prepared the Couscous Confetti Salad and Carrot and Red Pepper Soup for our lucnh. They were both "to die for". For dinner I made the Hoppin' John Salad. That was also very good. I have been serving our portions according to what the recipe says. I think we both could have eaten more than 1/2 cup of the Hoppin' John Salad for dinner. Instead we had a second helping of kale. We had never had kale before tonite, and we actually both liked it. We are both hoping to lose weight on this plan. We are going away for the weekend to visit friends. I know that will be very difficult, but we will try to stay as vegan as possible.

Hi all, This is my second Kickstart since Jan.1. and really look forward to the next 21 days. Have tried many of the recipes, some were tasty and wonderful; a few tried but did not like..not sure if my tastebuds will ever adjust to two of them but will not deter me from continuing going forward..great tip on the Cooking for One cookbook; will help with so many leftovers. The biggest change I have noticed since Jan.1st Kickstart is the tremendous energy I have now and no longer feel sluggish..even after eating ww pasta!,added bonus of losing a few pounds. Looking forward to having my labs drawn this spring to see how this new life style has helped. Great idea to post what everyone is eating. (good way to get new ideas/recipes) Today, I only had dinner. I had: Red leaf lettuce with vegan Caesar dressing (tofu, almond meal, capers, vegetable oil, nutritional yeast, etc.) a chickpea cutlet chocolate banana ice cream (one frozen banana whizzed in the food processor with cacao and vanilla extract)

I'll be shopping Tuesday, so starting a bit late. Monday dinner was organic, w.w. rotelli, topped with a jar of mushrooms, parsley, and celery, and a Boston lettuce, orange pepper, and tomato salad, with apple cider vinegar.
