I often hear from friends and family that the only thing that would keep them from going vegan giving up the cheese....sound familiar? I'm with ya. It's tough. Cheese is addicting.

So here is a little secret weapon to keep stashed when you are feeling at your weakest point. This is by no means low fat. It is calorie dense, however if this is what stands between you and suffering the guilt of 'cheating' then I say, indulge and be guilt-free!!!

Suggestions - make the recipe as-is. My family is as far from veg as possible and they ask for this dish all the time! I am experimenting with how I can make this more calorie/fat friendly. I'll let you know what I come up with.

Yes, cheese is very addictive. That recipe does look good. I may give it a try.

We do a nut-butter based cheese sauce (it was posted on the previous couple of kickstarts - look for threads about cheese) and use it for lots of things - mac'n'cheese (my almost 13 yr old mac'n'cheese connaisseur loves it), nachos, sauce for steamed broccoli and rice, etc. It's creamy good. Yes, it is a little on the higher-fat side but I plan for that in my daily eating - I'll have lower fat foods the rest of the day if I know that is on the menu (soups, salads, lots of fruit, etc).

Bugsmom...I tried you nut-based cheese sauce and loved it!!!! We now use it as a rare treat. Thanks for sharing.

Isn't it lovely? Very Happy We use it about once a week, maybe less, depending. Over the winter, it was a weekly thing because it was so cold and dry that we were all wanting the little extra fat. When the rest of the dinners are beans, grains, green veggies, etc. one meal per week of mac and 'not cheese' or nachos isn't all that - and it kept other cravings at bay.
