I made these too--twice. They are that good. Less fat AND way less expensive than the Guiltless Gourment baked tortilla chips I was occasionally buying. I used two different brands of corn tortillas. The Ezekiel ones were a little thicker so took a little longer. But yes, if you overcook them, they can get too hard. My tortillas were frozen, and I defrosted them in the microwave which steamed them a little. I imagine if they were already defrosted and dry, it would take a bit less time in the oven. You could try sprinkling them with a few drops of water before you cook them. And I didn't use any oil spray or parchment paper. I just put them on a baking sheet. They worked fine! I've always sprayed them before, but after trying the recipe instructions, it's nice to know I don't have to do that. (Makes the baking sheet easier to clean up too!)
