Artichokes...

We went grocery shopping last night, and was happy to see some of my favorite spring veggies coming in!

I picked up two lovely large artichokes, among other things. My problem is...my favorite way in the past to eat artichokes was steamed then dipped in mayonnaise! I've been having it that way since I was a little kid.

I'm keeping it low fat, so switching to a vegan mayonnaise is not an option.

What else could I dip my artichoke in that would be healthy? Please don't suggest eating it plain... Sad

I've never tried these, but they follow our less than 3 grams of fat per serving rule:

That's me - mayo!! When I became vegan I started dipping the leaves in hummus, either red pepper or garlic flavors. Also use Newman's Own Light Italian salad dressing. I've never gotten past the price of vegan mayo so have no idea what the nutrition label would tell me!

Try making your own vegan mayo out of tofu. I did a quick google and the few I looked at did add some oil, but perhaps with a little searching you'll find one that works? I made some for a fettuccine alfredo recipe with tempeh that was low fat and pretty tasty.

I like artichokes with hummus - but then, I think I could eat hummus on pretty much anything. LOL

Have you ever tried Vegannaise? It is wonderful and is very low fat. It has the best taste. I get it at Kroger. Since I no longer eat tuna fish though, I don't really need it. I like hummus for dipping veggies and tortilla chips though.

There is also a product called Nayonaise and you can get a Fat Free one. It is a processed food, so not necessarily a health food, but would serve your purpose without the added fat!

Sure! I don't really measure anything, so it's all to taste. Keep in mind, though, that I have 2 preschoolers so I normally make it so it's not to strong-tasting on any one ingredient. You can add spices like cumin or parsley if you like, too. Smile Here it is:

2 cans of garbanzo beans (you might want to start with 1 can)
1-2 cloves of garlic, chopped finely
2-3 green onions, chopped
tahini (or sometimes in a pinch, I just use a little bit of natural peanut butter - maybe a tablespoon or so)
lemon juice
salt
water

Add all but water to food processor and puree. Add water until it's the consistency you want and enjoy! Smile


I know peanut butter is a little odd to put in hummus but I was totally out of tahini one day and didn't have time to get to the store and tried it and it was great! It doesn't make the hummus taste like peanut butter unless you add too much in, so go slowly with it. As I said, I think I add about a tablespoon for 2 cans of beans, so it's not much and you can just make it without it, too.

ETA: Just wanted to add that if I'm missing one ingredient (other than the beans, of course), I'll still make it and just leave that ingredient out. This really is a staple in our house, as my kids and I all love it and tend to eat it almost daily.

the way they eat them around here is with a vinaigrette so I suggest doing the ginger dressing from the chinese salad (can't remember the name right now) recipe in the 21 day plan and dipping in that or:

equal portions of soy sauce, lemon juice and water
add mustard and if needed maple syrup (v. little) to taste beat it all till its nice and mixed up...GO *hmmmm*
