need grill recipe please
Posted Friday, September 17, 2010 at 7:41 AM

Guess what? My birthday is coming up. Mom is throwing a party. Outdoors.. she is grilling hot dogs and hamburgs ... and making tradional salads...

lol.... she told me to bring whatever it is i can eat. mommy mommy mommy... i had to chuckle.. i eat food mom!

I love black bean burgers.. is there a recipe out there that will hold up to the grill? maybe i should just put a lot of quick cooking oats in mine.

i can make a couple of the salads from the kickstart. i bet people will try them.. most of my family eats whatever is around and trys a little of everything.

i am thinking veg kabobs & blackbean burgers... if i can find a recipe.

thanks!!

There's a cookbook called the Vegetarian Grill (has some awesome recipes, not all vegan but readily adaptable). One thing they suggest is not using oats because it can sometimes get a gummy texture. The one we liked was a black bean and bulgur wheat patty. And it did hold up to the grill nicely. Don't forget, too, that you'll want a nice whole grain or multi grain bun for the patty (if you're going to make it look like a 'regular' burger).

An alternate suggestion might be grilling up a nice meaty portabella mushroom with some of the BBQ sauce (check the menus, there's a BBQ portabella recipe).

Or bring a container of a pre-cooked grain (couscous, brown rice, whatever you prefer), warm that up, and have that with the veggie skewers. That's one of our go-to summer meals and we love it. Lots of colorful veg skewered and grilled...mmm And everybody around is going to be pea green with envy when they compare the bright bell peppers and other veggies on your plate with the brown and beige burgers on theirs. Very Happy

Thanks Deb.
you know i tried that bbq mushroom.. i liked it ok.. have you ever done the mushrooms just plain? or with garlic?
I don't eat much bread. I am not concerned about making it look "normal" In fact when i did eat hamburg, i seldom had a bun. I prefered brown rice.

so i think mushrooms and veggie kabobs it is. do things dry out on the grill unless you marinate them? i really just like the taste of the veggies.

For the kebabs, we just cut up the bell peppers, onions, mushrooms (for me and hubby, son isn't fond of mushrooms at this point), summer squash, zucchini (don't need to cut up cherry tomatoes) - no marinating, just pop them on the skewers and onto the grill (if you're using bamboo skewers be sure to soak them good first or they'll burn in between the veggies and fall apart - go ahead, ask me how I know Wink ) Yes, we usually just do the kebabs up plain and then add seasoning when we put it on the plate - hubby and son will spritz with soy sauce, I'll usually use a splash of balsamic vinegar.

When we have bean patties, we usually serve them on home made whole wheat tortillas.

When I do skewers, I do marinate them first. I also like putting chunks of pineapple on mine and Whole Foods and Trade Joe's sells a SUPER firm tofu. Not in the asceptic box, nor in the water tub, but in a sealed plastic bag. This is very firm and yummy on the skewer!

Enjoy you Birthday and Happy Birthday!!

marinating is optional, as are the ingredients on the skewers - there are lots of things that grill up nicely. For us, tofu is out because soy en masse is a problem for me. Sometimes we do pineapple, sometimes not, sometimes a few of each. Same with mushrooms - we usually do some without the mushrooms because son doesn't want them. Sometimes we use a nice marinade, sometimes (usually) not (marinating them means working ahead of time to give them time to soak up the flavors, we don't always have the advance prep time).

Oh, and you'll probably want to bring a couple extras along because there'll probably be at least one person who wants to have one because they look and smell so good! Very Happy
