What R U eating today-Mon April 4th?

Hi All,
I asked this question last kickstart. Some people are following the kickstart to the tee and others just eat vegan. It seemed to work well. To me it was like having everyone over for potluck. It kept some people on track and inspired others for new dishes.

So what are you eating today?

Me I am having..

b-long cook oatmeal w/fresh strawberries & soymilk.

L-left over from last night's dinner, jeff novicks power lunch which was whole wheat pasta, red beans, fresh spinach with a nutrional yeast dressing. I am always surprised that the dressing is good. I did add scallions & about 1 tsp cayanne to the recipe. Very good.

d- well i am making more black bean burgers today. i am going to try out a black bean version of the tempah burgers i fixed last week. - they are all gone.. bascially my honey's favorite basic recipe then add either a tomato product, low sodium v-8 or hot sauce, chipolte chili powder, frozen corn, celery, and onions.

snack... either a bowl of stawberries w/milk alternative. .or/and left over Mexican Lime Cumin Slaw.

Good morning! I always enjoy this thread and seeing what others are doing. Today I am going to stick to the plan for at least 2 meals.

b: steel cut oats with apples and cinnamon
l: leftover shredded veggie salad with steamed red potatoes.
d: Hoppin' John Salad ~ I'm following the recipe about 80%, but using leftover wild rice / brown rice mixture and canned diced tomatoes since I don't have fresh.

snacks will be fruit and maybe some popcorn, air-popped.

A wrench in the gears may be my company coming this evening (a friend and her daughter who are visiting a nearby college). They plan to come late, but if they are here at dinnertime we will go out. Confused

B~ banana and peanut butter wrapped in a fat free whole wheat wrap.

L~ I'll be going to Orlando and having lunch at Ethos Vegan Kitchen. Monday's they have Reubens, one of the things I miss from my meat eating days (went vegetarian in 2000, vegan January 2011.) Their vegan Ruebens are AWESOME. Actually everything on their menu is delicious, I'm just partial to the Ruebens on Monday.

D~ since lunch will be a splurge I'll probably just have a big salad for dinner.

B - Orange Cinnamon tea, Cream of Brown Rice cereal with hemp milk, banana

L - 1/2 Baked Acorn squash, scoop of Carribean Black Beans and Brown rice, sliced tomato, navel orange.

D - Vegan Crockpot Thanksgiving Casserole (A layer of seasoned greens topped with a layer of garnet sweet potato slices, and finally a layer of vegan stuffing). Side of my secret recipe garbanzo beans. Some kind of fruit for dessert.

The kids will have homemade vegan peanut butter rice krispie bars for dessert. They are made with vegan chocolate puffed rice, peanut butter and brown rice syrup instead of marshmallows.

B -- cereal with soy milk and bananas
L -- veggie pita pockets with black beans and couscous salad
D -- vegan chili

Today is my first vegan day, so I tried to keep it as simple as possible, so I don't get overwhelmed. I also wanted to keep it with things I know the Mr. will like so he stays on board as well.

Breakfast: multigrain cereal, plant milk, vegan chocolate chips
Lunch: homemade lasagna filled with a mix of black beans, quinoa, spinach, almond-milk ricotta. It's not 100% vegan because we added pesto we made last summer to the tomatoes for the sauce and it contains a bit of parmesan.
Snacks: apple, banana
Dinner: not sure, possibly nachos - corn tortilla chips, salsa, black beans, not-cheese sauce, and mashed avocado

I am going to stick to the menu somewhat today, with a few tweaks for my taste.


B: old-fashioned oats with apples, cinnamon, ground flaxseed and some unsweetened almond milk

L: I am going to try the confetti salad and the soup

S: banana

D: also going to try the hoppin john and kale.

Hoping to get to the gym for the first time in eons, too. Just to do a little walking/jogging on the treadmill, at least.

@pippin.. eating out.. what will you do? two that have worked for me were pizza with no cheese (i wish someone had whole wheat crust!) and chinese food resturant will serve tofu. So don't let it stop you..go girl..

@ wild4stars.. what do they make that reuben with? seitan? tempah? tofurkey? i looked for it on their menu and didn't see it. I used to love reubens and sweet potato fries...yummm

@spongebob.. so how long have you been vegan? I am looking forward to seeing your posts.. you eat a little different than i do and some might inspire me.How did u come up with that name?

@ cookiemonster... Just mentioning Kale makes me want to make soup! I can't get enough. I throw it in anything.. soup, burgers even a salad.. I love the stuff. So glad i tried it. I think it was probably due to a response or two on this message thread from last kickstart.

I'm going to follow more of the recipes this time around. I've been vegan for almost 2 years now, but as summer kicks in, I find that making time for my usual two-hour cooking sessions just isn't feasible any longer. So, I'm going to make some of the quicker dinner recipes during the kickstart this time. Hopefully, they'll become part of our regular rotation.

Re: eating out. I have been doing this for 6+ months now, so I know all the good places to go. I can find something just about anywhere. If we go Mexican I will have veggie fajitas with black beans. If we go Asian, steamed veggiew and tofu. If we do a steakhouse, I can always get a salad and baked potato. Even the local pub has a veggie burger, or a good mixed greens salad.

My friend is somewhat less than adventurous... so if we go to Applebees... well, I may just get a beer and eat something before we go.

Or you can still get a baked potato and a salad, maybe see if they have steamed broccoli as a side option. Places like that usually have their menu online so it's easy to plan out something ahead of time.

I was really disappointed when the menus came out friday and they were EXACTLY the same as January's...apparently I missed the whole use them as a base and find some recipes on my own!!! Sooo..now I am looking for a good cookbook or two...BUT to answer the question....lol


B - organic peanut butter O's cereal and soy milk

L - going to "A MOVEABLE FEAST" and get the BIG VEGGIE BOWL love that restaurant and it is close to work

D - Eggplant Parmigan from Olive Garden

oh...did I mention I am training a new employee this week so....14 hr days it is.....

Do they have a vegan eggplant parm at Olive Garden? Usually, eggplant parm (anything "parm") is smothered in melted cheese. The soup, salad, breadsticks option could be vegan(depending on the soup - I think they have at least a minestrone that is veg based (but always double check what the stock they use is - could be beef or chicken).

@ debbie.. yes i was feeling the same.. disappointed the menu and recipes are exactly the same. Wouldn't it be nice if they featured the veggies, fruits and produce that were coming out the time of year the menu does?

I guess that is harder because as we see this is world-wide. Still it would be nice to feature a different soup, new salad or a new sandwich.. oh well. I guess that is a good reason for this thread.

I plan to stick with the kickstart meals, but switch them up from day to day depending on what I feel like making. I would have the couscous today, but I'm out! Will make a run to the store later, because the couscous confetti salad is one of my favorites Smile

Oatmeal (made with half steel coat oats and half wild rice blend) that also had cinnamon, vanilla extract, organic cherries, pumpkin seeds, chia seeds, plant milk, and two soaked dates, finely chopped.

Lunch: Black bean salsa made with lime juice, fresh orange juice, shallots, jalepeno, cilantro, red bell pepper, and kale. Served with Bell Pepper soup on the menu for today.

Dinner is going to be zucchini pasta served with a spicy marinara sauce and a side of pine nut sun dried tomato cous cous.

I haven't quite figured out the snacks yet..probably mostly fruit, or one of the lemon blueberry protein muffins I made this weekend. Surprised) Ya'll have a great day!

I'm planning to stick to the plan as much as possible and reasonable. The tweaks I'm making today involve things like adding applesauce to my oatmeal instead of apple concentrate and using brown rice instead of couscous in the confetti salad. I'm looking forward to trying some new recipes.

lol...that is what I thought too....they would be more "springy" ....but it is just a minor bump in the road...

hmmm....I did not think about the cheese....salad...and maybe the minestrone....thanks!!

L - confetti quinoa salad (hubby made it last
night for dinner)
D - not sure. hubby will prob cook and he is aware
that it will need to be vegan.
S - banana and peanut flour.

i am having a hard time with only one snack. i am used to eating B,S,L,S,D,S. any suggestions???
