Easy Vegan options for kid's lunches

I am very new to a vegan lifestyle. I work full time and have 3 kids, so my time is very limited. I am hoping some of you can give me some ideas on quick and easy options to make for my kids' lunches besides sandwiches w/ lunchmeat.

And I think the vegan lunch box lady has a website where she posts lots of stuff!

Challenging problem. Best resource that I have seen on this is Vegan Lunchbox by Jennifer McCann. Hope this helps. Congrats on taking the steps for yourself and children.

Read back in the threads; there are a couple of quick-and-easy threads. Also, the blog some folks have mentioned is as http://veganlunchbox.blogspot.com, but I think some of her lunches are a little fussier than I'd do if I were pressed for time. My number one suggestion would be to think every time you're making dinner "Could any of this be used as a leftover for lunches?" Mashed potatoes make excellent potato patties, for instance, and lots of veggie dishes are fine the next day cold.
