Almond Butter

OMG! I just realized that I used almond butter on my toast yesterday instead of apple butter. I also ate the meatless Boca burger in the freezer and saw that I should have eaten a veggie burger. And one last thing, I ate my cereal w/ choc soymilk and it wasn't fortified. Three mistakes already.

I really didn't care for the carrot and pepper soup, so can I subst. the hoppin john salad instead? Just for future reference.

By all means, don't eat anything you don't enjoy. The typical person eats an average of 7 different meals in a week anyway. You don't have to eat something different for each meal each day. That would be 21 different meals to prep! Plus snacks. Yikes.

Anything we suggest - groceries, recipes - is flexible. Do you what is best for you.

I think the meal plan is supposed to serve more as a reference point. Especially to those that don't quite no where to start. I think not knowing what food choices to make could get overwhelming. Which is why the meal plan exists.

I for one have not followed it at all! So I think you are ahead of the game. As long as you are eating vegan, getting plenty of fruits and veggies, then I think you are fine! And it sounds like you are doing very well! I wouldn't stress about it. Just use the meal plan for ideas, and suggestions. But, I don't think you have to follow it to a T.

I've never seen a soymilk that isn't fortified. There's no Vitamin D or B12 in it? What does the nutrition info panel say? Just curious. Maybe it's because I never get the chocolate.

And I don't follow the meal plan exactly either, so don't stress. You're doing fine. It's just for ideas. (The recipes I've made from the Jan Kickstart have been really good though.)
