Bathroom troubles...opposite of other posts

So, I figured I would be using the restroom much more frequently as when I have upped veggie consumption in the past that always happens.

My basic diet is

2 fruits in the morning and 2 packets of healthy instant raisin oatmeal (long morning 5-11:30)

Lunch: Usually soup (squash, sweet potato, or potato w/broccoli) or today I had healthy enchilada pie w/corn tortillas, black beans, refried veggie beans, onions, corn, salsa)

Snack: HUGE (8 cup tupperware used and very packed) salad-mixed greens, carrots, tomatoes, red cabbage, zucchini, red bell pepper, 1/4 cup kidney beans, cucumber and a tiny bit of sliced beet and red onion

Dinner-mashed red potatoes w/garlic, broccoli, veggie mushroom/onion gravy

It seems that I am only going once every other day or every two days...this can't be right!!! I am trying to be gluten free as it was suggested to me and eat really healthy...not trying to lose weight and don't know if I have or haven't...pants feel a little looser but....anyway any thoughts or ideas would be appreciated

Our bodies are interesting, aren't they?! I suspect that this "problem" is just part of the transition. Maybe try drinking water and/or herbal teas throughout the day and see if that helps.

My doctor (and Dr. McDougall, too!) says that it doesn't matter how often you go as long as you're not straining, and the stools are of a normal consistency and color. If they're really hard or really loose, or if you are constipated, then you may have a problem; otherwise, your body's just doing its thing at its own pace.
