Two servings of the couscous dish

Two servings worth of Couscous Confetti Salad: one for today, one for tomorrow's dinner

6 Tablespoons of dry whole-wheat couscous
Half a cup of boiling water
1 green onion, finely chopped, including tops
1/4 red bell pepper, seeded and finely diced
1/4 carrot, grated
1/4 - 1/2 cup finely shredded red cabbage
2 Tablespoons finely chopped fresh parsley
2 Tablespoons golden raisins or chopped dried apricots
2 and a quarter teaspoons of lemon juice
1 Tablespoon seasoned rice vinegar
3/4 teaspoon olive oil
1/4 teaspoon curry powder
3/8 teaspoons salt
