The mystery of tofu and tempeh...

The fun of starting this diet is being introduced
to new foods. I tried tempeh with kale (lemon juice,
garlic). And brown rice. Nice lunch!

My question on both the tofu and tempeh. If you
are on the kickstart diet alone, can you freeze
unused tofu and tempeh?

Or do I just include recipes in that week to
use it up ?

Sorry for an elementary question, but I have no
clue on storing soy bean products. Shocked

I'm not sure about tempeh,but I believe I've read that freezing tofu changes the texture and makes it more chewy. A lot of recipes I've seen call for freezing the tofu first, actually, because the chewier texture works better for some dishes. So maybe just try it and see whether it works with the foods you've made. Smile

Hopefully someone else with more experience will chime in.

You can definitely freeze tofu and leftovers made with tofu. And, I have frozen tempeh as well and it's done fine.

When you buy tofu and freeze it right away in the packaging you can alter the taste and texture of the tofu so that it's more chewy for a stir fry. I'd highly recommend doing this for your stir frys as well as things like tofu tacos, tofy with taco seasoning to make burritos, etc.

When thawing the tofu, you can keep it out on the counter until it thaws or thaw it in the fridge if you have a bit more time.

Freezing will work out great, and I did not
know about the texture change when frozen.

Will try the stirfry soon!
