today's menue

Made the Hoppin John salad for later, was left with extra rice and backeyed peas,so....
Transformed those ingredients into bean burgers by adding green pepper, onion, ground sage and salt. mashed them together with a pastry blender. Baked at 400 degrees for 20 minutes per side. tWas good stuffed into whole wheat pita pocket with low fat mayo (0 chol.) and Bullseye BBQ sauce. had steamed green bean too. Desert was a rendition of the crocodile crunch recipe on this site. Yum!

That mix looks like it would also be a nice 'filling' for something like a lasagna or a pocket pie

I Love your plant based recycling burgers!!!!!I made a batch of delicious raw vegan burgers yesterday and they'e dehydrating as I speak for my lunchtime vegan feast.
