finally found it..

I have been cooking bean patties since sept. I had a hard time finding one that would hold together and taste good. I finally did it. I made them with a can of beans tonight, tomorrow i am cooking the soaked beans. Some day i might even make my own whole wheat bread crumbs. Anyhow.. they hold together enough to flip, they are easy, and taste good... so here you go.. if you are interested..

KG’s Favorite Black Bean Patties

½ Onion
½ Green Pepper
1-15oz can Black Beans, drained & Rinsed
1 tsp Red Hot Sauce
1 ½ tsp Egg Replacer stirred into 2 TBS water till combined.
½ tsp Cayenne Pepper
1 ¼ cup Panko Bread Crumbs

Preheat oven to 425 w/pizza stone in oven.

Place onion & green pepper in food processor.
Pulse 2 or 3x to get tiny chunks.
Empty onions & green pepper into big bowl.

Next put in Black beans, hot sauce, prepared egg replacer & cayenne in food processor. Mix till mush.

Put bean mixture into bowl w/ onion & pepper.
Add bread crumbs,stir to mix.

Form into 4-5 patties. Bake on hot pizza stone abt. 20 min.
(Same temp & time as Sweet Potato Fries.)
Enjoy!

oh.. and i finally tired the curry lentil soup.. it is good!!

Yes, the curried lentil soup is good.

I tried the Kwik Kale recipe for the first time yesterday and it was good. Today for the first time I made Winter Vegetable Medley from NutritionMD.org. Finished the plate.
I am starting to like vegetables. Smile

I had good results with the black bean burger from Veganomicon ... have stuck with that as "tried and true." I think it's the vital gluten in there that does the trick.

We love this recipe too! It translates well into other applications - cook them then crumble them for taco filling, make meatballs, etc. Next time, hubby plans to make them 'slider' size and pop them in the oven rather than doing them on the stove top and see how it comes out. Should be yummy! We're planning to serve them with a side salad and sweet potato fries (baked kind).

yeah.. i liked the other recipe too.. but not crazy about all the gluten.. one it is a bit expensive.. and two it adds flavor.. i did cut way down on the amount and it was good... i let it sit.. not crazy about the stuff that looks like strings in a veggie burger...

in case you don't have the gluten, it's nice to have a back up recipe...

We have a backup recipe that comes from a book called The Vegetarian Grill, it uses bulgur and an egg (haven't tried it since eliminating eggs but it would likely work just fine with any one of the substitute options). We buy the vital wheat gluten in bulk at the co-op so we can manage the cost a bit more closely - we figure out what our menus are for two weeks and we can just get enough to cover that (1 cup, 1/2 cup, 3 cups, etc), or we can buy more if we anticipate a few random recipes, whatever works best at the time.
