What recipes did you try?

I tried the Hoping John. I thought I didn't like black eyed peas, but discovered I was wrong. It was delicious! Also made the Couscous Confetti. Another winner! Made the Carrot and Red Pepper Soup. Not as good. Don't know if I did something wrong or not. I think it would be better if I left out the vinegar and the lemon and used ginger and curry instead. What did you make?

i made the hoppin john salad. Not a fan at all Ended up eating the leftovers of the confetti salad and soup. The confetti salad is the best, yum yum, i want more

HI Donna, Sorry to hear you didn't like the soup. Why do you think you did something wrong? Did you use the right amount of vinegar? Did you use vegetable broth or water? Did you taste the vegetable broth? Do you like it? Different brand thing again. One of the most wonderful things about this type of cooking is you can taste as you go. There is nothing to get you sick. I often taste my patties as I go. The first time i made that carrot soup it wasn't a favorite. But that was because it was tooo smooth. Well I have a recipe for Spiced Carrot and Celery Soup. It uses curry. I suppose you could definately try another spice you think would be good. Don't be afraid to trade things out. You know what spices you like. Spiced Carrot and Celery Soup 1 large onion, chopped 3-4 cloves of garlic, chopped 1 heaping teaspoon of hot curry powder 6+ medium carrots, grated 4 large sticks of celery, sliced pieces 4-6 cups of water Sea salt to taste Sautee onion & garlic in water for a few mins. Add curry powder; stir to release the flavors. Add the 4 cups water. Then add enough carrots and celery to make a hearty soup. If you have a few extra chopped veggies or it’s too spicy you can add more water. Taste and adjust. Bring to a boil; reduce heat. Simmer until the vegetables are tender. Use a stick blender to wiz some of the soup to provide a base. http://www.veganfamily.co.uk/carrot.htm

I agree about the soup. I am not a big fan. But I figure there is something for everyone and this one isn't for me.  I do like the hopping John salad, especially if I zing it up a bit with some hot sauce. Last night I made it with a wild rice, brown rice blend and that added some nice texture. Tonight it is beans and greens. I am not sure if I will do that today, but I typically love that dish too. I make it different every time. Experimenting makes it all fresh and interesting.

when we made the red pepper carrot soup way back in September, we used a combo of homemade veggie stock and a can of diced tomato with the liquid (no sodium added variety) - we blendered the diced tomatoes down into a tomato sauce like consistency. And, I think we changed up some of the spices as well. So, it was almost totally unlike the original recipe but it did contain roasted red peppers and carrots. --Deb R

I love the Hopping John salad but I'm not a big fan of the Confetti Couscous salad. I'm not a huge fan of couscous, though, so I think next time I'll try making it with quinoa or something else and see if I like it better. I kind of like the Carrot Pepper soup. I used unsweetened almond milk instead of soy milk, though, so it's not as sweet. I'm going to try adding tomatoes to it next time.

Thanks for all the responses! I'll try adding tomatoes to the soup next time. Might be good. The carrot and celery soup looks good! I am looking forward to lunch today.

@ mommyof 2... oh yes.. i always use the Silk unsweetened organic soymilk for recipes. Those sweetened varieties can really turn a recipe upside down. I didn't think of that when responding to donna. Definately unsweetened would make a difference. With that recipe i also just used water this time and didn't see any difference in taste.

Made the oatmeal on Sunday and took to work on Monday. It was delicious ! For lunch had the Couscous Confetti salad , which is delicious, and the carrot pepper soup. All 3 were winners. Will keep those recipes and use again. Am going to try kale for the first time in my life !

We tried kale (and chard and bok choy) over the course of the last two kickstarts and now they're in our regular rotation, depending on what looks good at the market and what is the best price at the time. Sometimes, interestingly, the organic lacinato kale is cheaper than the conventional stuff! We also like the rainbow chard a lot - very colorful addition to anything. We chop up the stems and cook them similar to adding celery to soups and stir frys. --Deb R

I think that's the biggest thing with the kickstart - encouragement and recipes to try those things you've looked at in the market and said "that looks interesting but what in the world do you do with it?" Alongside that, changing taste buds make for some interesting choices - hubby laughs that he never thought he'd say "we need more hummus" or "we're out of red lentils, need to get more" or "I really want more of that quinoa chickpea pilaf - it goes great with the braised kale!" --Deb R

I made baked ramen noodle salad for lunch. I like it! I looked at the Hoppin John and realized I had all the ingredients on hand -- I need to make it. My favorite (and the meat eating families) is the veggie lasange.

Hubby made the lasagna noodles then we filled it with a mix of black beans and quinoa, spinach, and almond milk ricotta (hubby found the recipe online somewhere). It was really yummy. --Deb R

I made the Hoppin John, Couscous Confetti Salad, Pepper and Carrot soup and the Kale. I loved all of them.  The Carrot soup tasted great... but kind of reminded me of strained carrots for the baby... But I ate it, and have more in the fridge for later. I've had kale several times now, mainly in soups and find that I really like the "Bite" it has. It doesn't break down and get mushy like alot of greens. Looking forward to what's next
