My DH Is Joining Me in February!

I am so excited to share that my husband has decided to join me going vegan for the entire month of February! We went away for 6 days, visiting family. During that time, I told him all about what I had been working on from the start of the year in more detail (he didn't really notice much in the 5 days before we left town as he loves the vegan soups I make for dinner anyway). I went over some of the stuff I've learned here, as well as in books by Dr. Fuhrman, Dr. Ornish, and Dr. MacDougall. Much of the information was very new to him, to say the least! He had lots of questions, as you might imagine. I answered the best I could, but wish I new of a really concise thing he could read (30 minutes or less) that would spell it all out for him. He's looking forward to helping with his tiredness issues, newly disccovered diabetes, and other health-related things. He's not willing to commit to more than a month at this point, but this is a huge step to try this at all. I am hoping he will see such positive changes that he'll want to continue! Last night before bed, he had a lot more questions about veganism...a good thing. Just before falling asleep...he sat up and said, "No pizza for a month!" I said if he really wanted pizza, we'd come up with a vegan version to make at home. "Can we make your crust?" Absolutely! I told him we could still make a great tomato sauce and put on any veggie he likes. Just no cheese or pepperoni. Think of it, I told him, as a "loaded" foccaccia! It really was a funny little exchange...I'm glad he's started thinking about it. So...those of you who are going (or have gone) from full-on omnivore to full-on vegan...can you give me any ideas about the transition (good and bad) and what I can do, foodwise, to make it easier for him? I'm planning on a substantial, favorite meal that I can easily veganize (bean chili and cornbread) for Night 1.

Oh, this is one I can definitely speak to, as I cook for a houseful of omnivores, and have been testing low-fat vegan recipes on them for years. Please forgive me if this gets a little long. Vegan favorites of my family: 1) Chickpea gravy. My partner says that everyone on this list would stop bingeing if they kept chickpea gravy around all the time. It's vegan with no added fat, but it tastes DIVINE, and it's so healthy you can drink the stuff if you want: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=732016 Also, the gravy makes excellent "shepherd's pie", which we call farmer's pie around here.
2) Tacos made with warmed corn tortillas, lots of veggies, and either TVP (seasoned with my own taco seasoning: 1 teaspoon each of cumin and chili powder, and a half teaspoon of salt) or Soyrizo or beans. (They also like bean burritos -- same concept, use flour tortillas without lard.) 3) Sloppy joes made with either TVP, crumbled frozen/thawed tofu, or chopped seitan 4) Udon noodle soup with onions, bok choy, and some protein source (edamame, seitan, tofu, whatever) 5) Potato soup: sautee onions in oil or water, add potatoes and water to cover, and a teaspoon each of salt and smoked paprika (or instead of the paprika, you can add some Bac-Os (vegan bacon bits) or liquid smoke). Bring to a boil and cook 1/2 hour on simmer, until the potatoes start to fall apart. 6) Spaghetti with marinara sauce, with or without TVP, or with the tahini rotini sauce at http://www.fatfreevegan.com/pasta/tahini.shtml 7) My family loves seitan. We eat chickpea gravy on mashed or roasted or boiled potatoes, most often, but it's great on a lot of things. My partner especially loves it in pot pie or farmer's pie. I can eat it by itself! It's also great to serve on veggie meat loaf or veggie burgers (for kind of a "salisbury steak" vibe).

I am so excited for you! My husband just jumped on board 8 days ago and it is going great. He has lost 4.6 lbs in just 7 days and inches too. He is a big meat, dairy and junk food kind of guy so this is huge for him. I am blogging about his/our journey on my website. You should check it out and it might prepare you for what you have a head of you. My husband is the same and won't commit to longer than the 21 days but I am thrilled at that. I am hoping that after he sees how much better he feels and hopefully he loses a good amount of weight he will want to stick with it or at least mostly. Tonight I made the Chili Mac and Corn Bread and he thought that was great. Good luck to you.

Thanks to everyone for their kind support! Serene...I love your ideas! Could you give me more details on your sloppy joe recipe and making seitan? This will really be quite a switch for my DH. I've told him more than once, if you are what you eat...then you are spaghetti and meatballs!

I had this bookmarked and forgot to go back to it. Sloppy joe is embarrassingly easy in my house. First, reconstitute a cup of TVP with a little less than a cup of water (or use Gimme Lean hamburger style and follow the directions on the package). I set the "meat" aside. Then I saute some onion and bell pepper in water, then add a cup of ketchup, tablespoon of brown sugar or other sweetener, and a teaspoon each of the following: mustard, cider vinegar, and chili powder. Then taste it and adjust it to your personal preference, simmer for about 5 minutes, add the "meat", heat through, and serve on buns. We like cole slaw with them. To make seitan, you can do it the time- and water-intensive way and start with whole-wheat flour the way I did in my hippy-commune days in the '80s. Easier, though, is to get Vital Wheat Gluten (available in health-food stores, on the baking aisle in some regular groceries, and online) and make it from that. My basic seitan is basically Jo Stepaniak's version from Vegan Vittles, but most people like it firmer, so I'm going to give you a few links.
