I've recently started following Dr. Joel Fuhrman's diet (similar to this kick-start program) and my main issue with both is the texture of the food. I love hummus, smoothies, lentil soup/stew, whole grain cereal, etc. However, the squishy texture starts making me gag after a couple of days. I've tried tossing in some nuts, or raw veggies, but it just seems like a lot of mush food. I really want to do this, but I need something crunchy that isn't celery.

Try roasted chickpeas. There are a bunch of recipes online, and one in the January forums somewhere.

I also like flaxseed crackers by Mary's Gone Crackers. They're probably a little higher sodium than ETL would like, but a good crunchy way to eat hummus.

There are dried veggies called "Just Veggies" or "Just Tomatoes" etc. at Whole Foods and Health Stores, near the bulk section sometimes. They're good to put in a salad for crunch. Here's their website: http://www.justtomatoes.com/dried_vegetables.html

I also like baby carrots, celery sticks, and whole-grain unsalted pretzels.

Most people who have ever tried rice cakes say YUK! But there are some new flavors on the market put out by Quaker and some of them are very good.

Cut up some pitas and toast them with fresh garlic spread on them.

Check your health food store for some of the newer crackers and chips. I know Eat To Live limits the amount of grains you can have a day, but those roasted chickpeas fit right into ETL. And they are delicious.

Soynuts are also very good and come in several different flavors.

Rykrisp crackers with hummus or salsa.

Snyders makes an Organic Oat Bran Pretzel that is fat free. It's not 100% ETL, but it could be an occasional treat.
