What R U eating today-Tues April 5th?

Hi All, Today for me is oatmeal... then dental surgery..then probably soup, soup, soup... maybe a bean pattie. We will see if it is an easy one or tough. I don't usually have to go to an oral surgeon. So that may be my first clue that this will not be a fun day. We will see. I am optomistic. I told the surgeons office just novicane not to be put out and I have told work i will probably be in after lunch. So what are you eating today?

It's a lovely morning and the birds are chirping and sun is streaming across my lawn as my raw vegan nut burgers are dehydrating for lunch. How amazing are the simple gifts and pleasures in life. Both my husband and myself have been veggie/vegans for many years so we're easy to please when it comes to vegan foods and we both really enjoyed yesterdays salads and soups. Have an insired week Sue

B- bob's red mill 8 grain cereal made with apple juice concentrate and an apple L - fava bean stew (fava beans, carrots, celery, onion, tomato, water, and spices)left over from last nights dinner and pineapple D - tba S- banana with peanut flour

Yes, it is the spices (cumin, cayenne, etc) that make it "brazilian" I guess. It's a stock of carrots, onion, celery, spices, then we add cooked black beans. I'd have to check with him for the actual recipe.A "brazilian bean soup" - how many beans is a 'brazilian'? --Deb R

Oh, and, yeah - it is a recurring item in the dinner rotation. We've got about half a dozen soups that rotate around each week - this week we've got the black bean soup, next week might be the red pepper carrot soup, the week after a simple hearty vegetable barley soup, and so on. Hubby will throw together some whole wheat drop biscuits to have with the soup for dinner the first night, then it becomes lunches for several days. Sometimes the soup happens early in the week (weekend/Monday) and then chili happens midweek; sometimes it's reversed. --Deb R

Went to bed late, woke up late.  Had a quick bowl of cereal w/plain soy milk. I had to pack lunch/dinner quickly--only had 2 minutes to do it! For lunch & dinner will be the leftovers from the couscous confetti salad. I'm at school from 8-2, then work from 2-8. tuesdays are my longest days.

Breakfast: Vegan hash of tempe, black beans and potatoes wrapped in a ww tortilla with some salsa and an orange Morning Snack: hummus with carrots and celery Lunch: 3-bean chili with cilantro brown rice and a salad Afternoon snack: orange and apple Dinner: Korean stir fry with rice cakes and tofu and a salad with miso dressing

Funny .... I made "Cuban" black bean soup last night, for tonight's dinner. The recipe is from Viva Vegan by Terry Hope Romero, but I left out the oil. You cook a pot of black beans with a little salt and two bay leaves (after having first soaked the beans and changed the water). Then you make a sofrito (supposed to cook it in oil but I did not) of peppers, onions, garlic, and tomatoes. The spices are oregano and cumin. You mix the sofrito into the beans and cook some more, add red wine vinegar or lime juice and I think that's it (doing this from memory). I haven't yet tasted it and don't know if it will need salt and pepper, but it probably will need at least a little bit. So today's meals - for breakfast, toast and coffee (the toast was two slices rye and two slices of a diabetic low glycemic Alvarado Street variety I found on a day-old shelf at the store). Lunch will be kidney bean and brown rice salad; baby carrots; a clementine; and an apple. For a snack I have rye crackers and homemade hummus. Dinner will be the soup and if I am hungry enough, a veggie burger. My husband will almost certainly want a veggie burger.

Morning: Oatmeal/oat bran (I find the texture of the two together works much better for me than just oatmeal) with 1 mashed date for sweetness and a dash of light soy milk Mid-Morning: Whole grain bread spread with homemade lowfat roasted red pepper hummus and cucumber Afternoon: Italian stew (mixed frozen veggies, beans in a tomato sauce and fresh Italian herbs) over brown rice Evening: Leftover pasta and veggies in marinara sauce (from a restaurant I went to before the kickstart - it's vegan and pretty low fat but probably not oil free ); pineapple for dessert; maybe some whole grain pretzels if I feel like something "munchy" I'm just getting over a migraine that started last night, so I'm trying to be a little careful with what I eat and rest a lot. Wow....all interesting stuff I have seen so far!! Mine is usual B- Green tea, Lara Bar L- Amy's non dairy black bean burrito S- Banana D- I am going to make some dikon or raddish flat bread (Indian recipe) with some green mint, cilantro chutney!!

B: steel cut oats with lite soy milk and 1/2 banana s: blackberries s: last few ounces of leftover split pea soup l: whole wheat pita pocket stuffed with hummus and the last of the confetti salad from a couple of days ago s: air popped popcorn with braggs spray d: most likely beans and greens. I have spinach... no kale... but maybe I have collards in the freezer. I will have to check. Anyway, improv is the key!

Hubby likes things spicy too but he tones things down because my stomach won't handle very spicy and son won't eat super hot spicy foods. We have a couple good really hot/spicy sauces that he can add at the table if he wants to. We like to get ancho chili powder and chipotle chili powder separately so we can adjust the depth of flavor and spiciness. It's interesting how used to cumin we've become - hubby made chili last week without it (we were out and hadn't gotten to the market yet) and son didn't like it at all. It goes into so many different types of meals. I asked hubby and he wasn't sure if the bean soup was from Vegetarian Epicure or Veganomicon cookbooks. And, even then, I'm sure he just used that as the base and adjusted things to suit himself. --Deb R

B-Oatmeal with applesauce & pumpkin,cinnamon & Vanilla and a few raisins L-veggies with hummus, strawberries & an orange D-whole wheat pasta topped with a mixture of whole tomatoes,collard greens and a veggie mix cooked in. Lots of garlic and basil added to it as well as some white beans. We are headed out of town Thursday morning so I dont' want to load up on groceries. I'm trying to make do with what I have on hand until then.
