canola oil in the corn bread?
Posted Saturday, September 18, 2010 at 11:53 AM

Im getting confused again!! I thought we should not be adding oil to our food but todays recipe for corn bread muffins has 2 spoons of oil added. Am I missing something? (apart from maybe a brain!)

The PCRM corn muffin recipe doesn't have any added oil. Perhaps you were looking at one of the celebrity recipes?

The link for the corn muffins on today's menu takes me to this recipe which does contain 2 Tbs. canola oil:

Perhaps the wrong link was used?

Oh you are right. From the weekly menu it takes you to this recipe: http://www.nutritionmd.org/recipes/view.html?recipe_id=725. From today's message, it takes you to the one you posted. If I were making the one with 2 Tbsp of oil, I would just leave out half or replace all of it with apple sauce or soy milk.

This recipe inconsistency has been corrected. Thanks for pointing it out.
