21 day Vegan?Raw kickstart Journey

Welcome … 21 days kick start Journey:

(Day 2) It’s a lovely sunny morning and the birds are chirping and sun is streaming across the lawn as my raw vegan nut burgers are dehydrating for today’s lunch. It’s a new recipe so I’m looking forwards to how they turn out.

How amazing are the simple gifts and pleasures in life.

Both my husband and I have been veggie/vegans for many years and have been primarily motivated to eliminate meats and dairy product out of our lifestyles predominantly for animal welfare reasons and it’s also interesting to be trying out new nutritional,food combining, balanced recipes and transitioning and incorporating more raw vegan plant based foods.

Totally enjoyed yesterday’s confetti salad and carrot soup!!

(Day 2)Lunch:

Carrot soup and a Very delicious Raw vegan homemade dehydrated burger with salad and Sprouted clover, raw fermented nut cheese on a Millet and flax bun, totally delicious and very simple to make.

If you’re interested in making your own raw vegan burgers you will need a food processor and dehydrator which you can pick up online or from Wall mart and make all sorts of other yummie things like crackers,fruit roll ups,Dehydrated flower pulp,fruits,veggies and herbs,mushrooms and many more. I grow my own an organic veggie garden in the summer with some friends so its a very useful process.

Dehydrating is also good because it preserves many of the nutrients and enzymes in the ingredients which can be lost in the cooking process.

Recipe:

This is the recipe for a surprisingly very tasty and simple Vegan burger:

Combine all the following ingredients in a food processor until required texture:

2 large carrots
I cup almonds and I cup pecans (can be soaked overnight for fluffy texture if prefered)
Half large onion
1 handful parsley
Quarter cup lemon juice
1 stock cube grated with small nutmeg grater or hymilayan crystal salt

Mold into required burger sizes and enjoy as a nutritional raw burgers or dehydrate fliping ocationally for about 2 hours, which I did today and it intensifed the flavour. I though it was a tasty vegan burger.

I also added my own home made fermented nut cheese,mustard,sprouted clover and salad to my veggie bun.

(Day 3 and loving it)

How wonderful and therapeutic it felt this morning to watch and feed the birds and run my dogs with the amazing sounds and sensations of this planet and nature in my ears.

My husband and I became Vegetarians as student over 25 yrs ago and have been Vegans for 5 yrs so we are really enjoying making and eating the 21 day Vegan kick start recipes together.

Today’s breakfast we drizzled with some freshly made raspberry and strawberry sauce. It also appears that my rather elusive and totally spaced out hymilaiam cat has also developed an interest in oatmeal and homemade almond milk.

I really enjoy being a Vegan and smiled today when I read on a link on Wikipedia that the concept of Veganism was linked to the word ashima, which apparently is a Sanskrit word for Non-harming and for me personally behind every plant based vegan meal there is an absence of the animal whose place the veggies or nuts replace.

So as a practicing Artist, amongst many other things, I will return to my studio to paint with my delicious veggie and vegan nut cheese hummus lunch for today.

Laughing I had a cat that loved the bottom of the bowl when my roomie and I made millet with a splash of whatever milk in it. She'd slurp up the millet, not just lap the liquid.

I’ve just made some herbal Echinacea tea and I’ll also see if my cat likes Millet

I found out yesterday that my dogs appear to enjoy popcorn with nutritional yeast seasoning. We’re not really big popcorn eaters, although we thought we’d try some in the menu and now their faces light up at the sound of the word with a sorter lip licking stimulus response action going on. Their lips not mine! Makes me smile when animals express preferences.

Looking forwards to this evenings curried lentil soup which is simmering on the stove at the moment

We thought it was funny that the cat would eat "bird food" (since millet is a major component of many birdseed mixes). We've got a dog that would eat anything (as my dad would say, he'd eat the hind end out of a skunk!) He seems to really like the peanut butter dog biscuits I make for him (really simple stuff) and he likes grapes and bananas. The funniest thing, though, is watching him when hubby is eating a pear. It gets eaten right down to the nub and then hubby hands it to the dog and says "take it outside" (so it doesn't make a slobby mess on the floor or anything). Some of the smaller pears never get that far - the dog just munches it down in a bite or two and that's it. Others he holds in his mouth like a bone and trots outside to eat.

Another delicious lentil and couscous salad meal to share this evening. I really enjoy currys and eating a variety of different multi-cultural foods.I'd never really considered adding couscous into curry, although it was a very interesting addition and the savory curry dish was a complimentary accompliment to the sweetness in the salad.We both enjoyed it.

Hurray…Hurray the weekends on its way!!!!!!And I’ve Just finished exercising and emailing and skyping friends and family across the pond in London and England.

Today’s breakfast was delicious Vegan ice creams with fruity berry sauce, added wheatgrass and Spiritulina.

I'm smiling at the moment, as my two English Border collies are anticipatedly tossing and retossing, with such precision,on to my lap, their favorite squeaky teddies and squeaky vegetables and it's funny to see their eager,happy expressions which reminds me that it's the simple experiences and moments in life that can so easily be taken for granted.

So I’m off to walk my two furry friends……. And plan to do some bike riding and excercising this weekend with my husband and dogs.

Woo hoooooo ….. Its the weekend ……and the birds are chirping again outside my window!!!

I’m doing a mixture of the 21 days recipes and my own creative and raw food variations.

I gave up processed foods and sugary drinks and fatty foods many years ago and as an already seasoned Vegan I’m getting very interested in Raw foods and the Nutritarian way of eating and looking at combining delicious Vegan and plant-based Raw foods into my own healthy choices.

I’ve been reading this morning about the Nutritarian way of eating and finding from my own experiment’s that the recipes can be delicious, even gourmet and it’s also an interesting factor that in eating foods which are highly nutritious that the body begins to feel better, require fewer calories and even loses cravings and addictions for low nutrient processed foods.

Nutritarians and Raw foodies are interested in the nutritional quality of foods. In a diet that is higher in something called micronutrients, in foods that are nutrient rich and therefore promote disease resistance.Foods Such as leafy green vegetables and colorful vegetables, beans and seeds. These foods are rich in vitamins, minerals and something called phyto-nutrients which seem to nourish the body and maximize self repairing and combat disease.

It’s concerning to me to read this morning that 85% of Americas healthcare costs are spent on diet related illness such as heart disease, diabetes and strokes, diseases caused by particular eating habits and that 60% of calories from processed foods have no nutrients with added sugars, salt and unhealthy fats.

THE GOOD NEWS and a motivation to stay eating healthy....is that once people decide to start eating differently, the body gets the nourishment it needs to repair the damage in the body and recover from food related illness.

Remember today to maximize your health,look after yourself and stay inspired
