Vegetable Soup for dinner

I made a nice vegetable soup for my sister and I tonight: 1 box of low sodium veg broth 2 cups water 1 sweet onion 4 seasoned cloves of garlic 3 stalks of celery 4 carrots 1 parsnip 3 red potatoes 3 mushrooms (for taste, she doesn't like them, so I left them big to pick out!) 1 can of chickpeas 1 can of tomatoes with garlic, basil and oregano 1 can water packed artichoke hearts 1 zucchini extra basil, salt and pepper to taste. Saute onion and garlic in 1/2 cup of the broth. When soft add the rest of the broth, water if desired, celery, carrots, parsnip, potatoes, tomatoes, and can of chickpeas (drained). I put a lid and temp on low, letting it simmer all day. Right before serving I put in the zucchini and artichoke hearts. I don't think I forgot anything,but if I did add something you like!! I served it with some fresh gluten-free bread and probably ate too much!
