Vegetable Soup for dinner

I made a nice vegetable soup for my sister and I tonight:

1 box of low sodium veg broth
2 cups water
1 sweet onion
4 seasoned cloves of garlic
3 stalks of celery
4 carrots
1 parsnip
3 red potatoes
3 mushrooms (for taste, she doesn't like them, so I left them big to pick out!)
1 can of chickpeas
1 can of tomatoes with garlic, basil and oregano
1 can water packed artichoke hearts
1 zucchini
extra basil, salt and pepper to taste.

Saute onion and garlic in 1/2 cup of the broth. When soft add the rest of the broth, water if desired, celery, carrots, parsnip, potatoes, tomatoes, and can of chickpeas (drained).

I put a lid and temp on low, letting it simmer all day. Right before serving I put in the zucchini and artichoke hearts.

I don't think I forgot anything,but if I did add something you like!!

I served it with some fresh gluten-free bread and probably ate too much! Laughing

Thanks for the soup recipe Oceandog. I am always on the look out for anything new to try and the soup sounds good; have you tried adding couscous to salad greens before?
Make a regular tossed salad using the raw veggies of your choice, add 1/2 cup of cooked couscous(I prefer garlic flavored), toss w/evoo and balsamic vinegar dressing with crushed dried basil and oregano,freshly ground black pepper, dash of salt. Lettuce of choice: Butter with handful of fresh spinach. This combo holds the dressing well. The best thing about using this grain is it absorbs the dressing taste wonderfully.
Has anyone tried using other types of grains in their salads?

I can't actually use couscous because it is a wheat product, but I LOVE adding Quinoa to things like this! You should try this grain also, it is a power house of nutrition!
