What kinds of recipes are people looking for?

If there are ways to get a similar result (texture, taste, etc) with some other ingredient (for example, we make a mayo sub from white beans instead of silken tofu), that would be helpful. I know there are a lot of folks looking for gluten free variations. And, easy to pack lunches for commuters (things that need little to no refrigeration, can be tossed into a container and hauled in a brown bag, backpack, large purse). I'm fortunate that I have access to a full size fridge, microwave, stove/oven but few people have those luxuries at work. Maybe some "Bento box" inspired ideas would work since they're designed to pack and go. Maybe some "renovated leftovers" ideas - cook a double batch of black beans and brown rice today, make recipe 1 with 1/2, store half, on Thursday use the beans and rice for a second very different meal. For example, beans and rice can be tex-mex or they can be part of a stir fry. Or, beans and rice tex-mex style tonight, breakfast rice pudding tomorrow, bean soup the next day. --Deb R

I bought tempeh and then was disappointed that "Happy Herbivore" only appears to have one recipe for that ... so I am looking for tempeh recipes. Also, at our local Whole Foods I get "vegetarian chicken salad" made by a local company called Helen's Pure Foods and also get a "vegetarian tuna salad" made by Asmar's (I think they are in Virginia). Both have TVP on the ingredients label, as well as Vegenaise. I would love to have recipes to replicate those items because WF is not around the corner from me so I can't have those things as often as I would like to. I might add that tuna salad is something I really miss; I used to eat it several times a week.

Nice reply Deb, yes we have 2 in this household that have Celiac and 1 who is coping with cancer. So lots of beans and grains for us, but I believe I cannot feed her kale, collards, dark greens, broccoli, chickpeas, etc because of the Vit K levels because of the Coumadin she is on. Ideas would be most gratefully appreciated.

Gosh there are soo many! I am thinking they just want something new. How about a hot sandwich? hummus, spinach, sliced tomato on whole wheat or rye.. how about a ruben? or jeff's power lunch.. or a list of different stir fry sauces. or a simple corn & tomato & onion & celantro salad w/lime or an awesome vegan bean pattie w/real french fries (sweet potato) What i hear people saying is they just want some different recipes. A rotation.

We make a tuna like salad using chickpeas. Cook the chickpeas, give a few pulses in the food processor - just enough to break them up, to get a tuna like texture, not as much as you'd do for hummus. Add diced onion and celery. Mix in vegan mayo (commercial) or beanaise (homemade using white beans - recipes are online) or splash in some cider vinegar, mustard, garlic, and a little bit of olive oil (just enough to help it get a little 'sticky', up to maybe 2 tsp per 16 oz chickpeas). Taste and adjust seasonings as you choose. Even my almost-13 yr old tuna-loving son prefers this to tuna. I keep asking when I make the grocery list "Do you want me to pick up some cans of tuna?" and he says "nah, as long as we have 'not-tuna' ingredients, I'm good" --Deb R

Try the web site vegweb.com. I have found many recipes there for vegan Chicken & tuna salad plus many others. A lot of times there recipes have to much oil but most of the time there are ways around that.

I'd like recipes for salad dressings. I do NOT care for the commercial OIL FREE dressings. They maybe have too much vinegar? I'm not sure what it is but they almost choke me. I tend to shy away from salads because I don't look forward to the dressings I have in my fridge.

Commercial dressings use all sorts of stuff to get the creamy "oil" texture without oil - read the labels, if you can pronounce half the ingredients, that's really good. We make a simple "honey mustard" using prepared mustard and liquid sweetening (honey, agave, maple syrup, etc) Really simple and easy. Just add equal amounts to start with (like 1 tbl of each for a single serving) then taste and adjust either sweeter or tangier. You can also add a half-portion (so 1/2 tbl per tbl of the others) of vegan mayo, silken tofu (mushed up), or pureed cooked white beans to get it a little thicker (hubby got it a little too thin one time and this worked fine). Personally, I like just a spritz of balsamic vinegar on my salads, so maybe I'm not the best source if you're not a vinegar lover. If you look up "beanaise" online, you can find recipes for a white bean based "mayo" substitute that you can use for all sorts of salad dressings, if you're not using tofu (we don't use tofu at all). --Deb R

I just thought of something that I could really use a recipe for - we used to be able to make our own instant (just add hot water) hot cocoa mix by using powdered milk, cocoa, and sugar. Does anyone know of any non-soy sub for powdered milk or a vegan non-soy instant cocoa? --Deb R

Re salad dressings: I have a recipe that uses ground cashews, balsamic vinegar, dijon mustard and shallots that I LOVE. I'm sure you can use different stuff to flavor it, but the trick is the cashews make it creamy (you have to soak them in water for like an hour and blend it really well so it's not grainy).

If you can get good quality (nothing added) cashew butter (we get an organic, no added oils or salt or anything variety), that can cut down the prep time on a lot of recipes. Thanks for posting this - we could use the cashew butter as a thickener for the honey mustard easily enough instead of having to make sure we've got cooked white beans handy (we've ALWAYS got cashew butter on hand :lol --Deb R

Samples of international food recipes that are vegan. Mexican Spanish Greek Middle Eastern Chinese These are the type of restaurants we favor, so anything I can make at home with the flavors, and spices that are vegan recipes are welcomed! Looking for main entrees. Thanks!

BTW the cookbook 1000 vegan recipes has 14 salad dressing recipes. One that looks especially good is Creamy Avacado Dressing. In food processor combine.. 2 garlic cloves, 1 ripe avacado pitted & peeled, 1/4 cup minced fresh parsley, 1 1/2 tablespoons fresh lemon juice, 2 tablespoons water, 1/2 tsp salt, and 1/8 tsp cayenne. Add up to 1/4 cup vegetable oil till creamy & smooth. Best used same day. I suppose you could leave out the salt and maybe even try water instead of vegetable oil..? Also i more often than not use bottled lemon juice. another is Creamy Cucumber.. put in food processor & combine 2/3 cucumber peeled, 3/4 cup plain vegan yogurt, 1 1/2 tablespoons fresh lemon juice, 1/4 tsp salt, 1/8 tsp cayenne. When combined pour into a bowl add the other 1/3 of the cucumber after you peel, slice & dice it. Add 2 tablespoons minced fresh parsley. do they sound any better??? A store bought one i enjoy is Annies Organic Shitake Sesame. I have tried store brands and they don't come close. So Annies it is for me. 2 TBsp=120 calories w/all of them fat from either veg oil or sesame oil.

Recipes i am looking for... How do we make air pop .. popcorn and have anything stick to it??? Nutrional yeast falls to the bottom.. same with cinnamon.. is there anything that we can dress airpop popcorn up with that sticks and tastes great???

I'd love to have recipes for a couple of simple sauces that I can mix and match with my own ingredients. Maybe a sauce that I can add to brown rice and beans or something that would go well with veggies and tofu. I really just want the sauce recipes since I'd like to be able to just add whatever I want without messing with a whole long recipe.
