Quick Vegan Dinner - Stuffed Potato

* 2 Potato (Sweet or white)
* 1 Avocado
* 2 tsp turmeric
* 2 T Flax see oil
* 2 splashes of tamari or soy sauce
* Nutritional Yeast Flake to taste.


Instructions:

1)Bake the potatoes.
2)Press potatoes until slightly flattened.
3)Cut long ways and press the ends together to open for a nice presentation.
4)Sprinkle turmeric,yeast flake, and flax oil over both potatoes and mix a bit in the skin. (You don't want a bite heavy in turmeric.)
5)Top with avocado.

This is a fast favorite of ours in our house.
Serve with a side of steamed broccoli for a meal that is very anti-inflamitory.

A baked potato topped with steamed broccoli and the "not cheese" sauce is also really good. There are so many things to do with potatoes. I'm wondering if the other changes in my eating habits might make it possible to go ahead and have a topped baked potato occasionally. I love potatoes but they have done really nasty things to my glucose readings in the past.

Everyone is different, but this meal doesn't affect Shell's (my wife)sugar at all.

There are some reasons for that.

1. The Glycemic index of a potato meal is reduced when mixed with fat.
2. The meal is chock full of anti-inflamatories. Broccoli, turmeric, flaxseed oil.
3. None of the fat is cooked. This seems to be a key trigger for Shell's glucose. Cooked fat messes up her suger control for days. Raw fat actually seems to help it.
4. Let me repeat everyone is different, and as good as her control is now, I am not a doctor....but I did stay at a Holiday Inn Express.

Yeah, I know some folks who can't go near brown rice but are fine with occasional baked potatoes. I'm okay with brown rice but potatoes have been problematic. Some folks can handle oatmeal or cold cereal - I have to watch both really carefully (thus I pretty much always have the exact same breakfast that I know 'works').

Maybe I'll try the baked potato with steamed broccoli and not-cheese sauce on a day that things are going really well. I really miss baked potatoes - a simple baked potato with a dab of vegan margarine (non hydrogenated) or even just the potato 'naked' is so sweet and tasty!
