I am lost - not that computer savvy - don't have a clue what I am doing or where I should be typing. This empty space looked good. I have begun the Vegan Diet. I like it but would like to hear from others who are doing the same. My friends and family think I am a bit kooky for trying this. I don't want to have to take chemicals for my newly diagnosed diabetes. I have read Neal Barnard's book and before starting a chemical I am trying the Vegan way. I have been doing it since January 23, 2010. I have lost 15 pounds and feel well. I walk 4 or 5 days a week but would like to do more at some point. Maybe a few reps with the had weights or some exercises. I cannot cook - I have never been able to cook - my late husband took care of that chore. He said if you can read you can cook - he took that all back after he married me and tried to help me read a recipe and cook - I did try and did get better but never good. This diet requires a fair amount of cooking so needless to say I eat food that does not taste good but I know it won't hurt me and will help. If anyone receives this - thanks for "listening".

Congratulations for taking this first step even though it seems a bit uncomfortable right now. You say you don't know what you're doing, but you've lost 15 pounds and you feel good so sounds to me like you are doing pretty darn good. There are lots of ways to eat Vegan and healthy without doing a lot of cooking. If you found this forum you can check out some of the threads about favorite foods and grocery lists. There are lots of good ideas about things that are easy and quick.

I'm sorry to hear that you've lost your husband and best cook, but Jasmine YOU CAN DO THIS !! It sounds like you have already overcome many hurdles and this may really be one of the easier ones! Hang in there! There is lots of support here! You deserve good health.

I make a yummy salad with bagged salad greens, fresh cut strawberries, dried cranberries and some cashews. Add a little balsamic vinegar and olive oil. It's tasty, fresh and easy.

Also, sweet potato fries are easy - peel a sweet potato, cut it into the size of about steak fries. Coat with a little bit of olive oil (I use a basting brush and about a tablespoon of olive oil for a whole potato) and sprinkle with some sea salt. Cook for a half hour at 350 degrees on a baking sheet. Voila! Easy.
