Suggestions for pizza toppings

Tomorrow my parents are coming for a quick overnight visit. I took some pizza dough out of the freezer (whole wheat, i made a couple of weeks ago) and I am wondering what toppings might be good to use. I make a rocking garlicky tomato sauce, and I have a vague idea to dollop some pesto on top (I made vegan pesto a while back and put several containers in the freezer).

What else might you suggest? I want to wow my folks and make my dad forget that there is no cheese. They love pizza and are just fine with vegetarian and even some far out ideas. I am totally open to new and creative ideas.

spinach and garlic is always good. . add some roasted red peppers .. or artichoke hearts.. pizza is good with ANYTHING.. what do they like????

Lots of onion, black olives and mushrooms. Some kind of vegan cheese if they MUST have cheese. Fresh tomatoes is another good one. There's a vegan pepperoni that's hard to find, but my omnivore hubby loves it. At least it's hard to find in my area. I wish I could remember the name of it, Smart something I think.

Ditto on the artichoke hearts.

Some other ideas:
Slivered garlic
Olives (Kalamata or black)
Bell Pepper (red is best)
Sliced cremini mushrooms (aka "baby bella")
Banana peppers
Broccoli
Sweet yellow onion
Pineapple
BBQ- or Jerk-marinated tempeh
I <3 eggplant, so I say ... EGGPLANT! Laughing

The pesto sounds like an awesome idea. Let us know how it turns out!


One more thought... I wouldn't suggest putting this ON the pizza, but it might be good to dip the slices in. It's super-high in fat though, so use with caution! Smile

Not-Yo-Cheese
2.5 c water
1 c cashews
2 tsp chili powder
1.5 tsp salt
1/2 raw onion (or 2 tsp onion powder), roughly chopped
3 cloves garlic (or 1 tsp garlic powder)
1 scallion, both white and green parts, diced
1/3 c nutritional yeast

Add all ingredients to food processor or blender and process until smooth. Pour into a small pot and cook over low-medium heat for 8-10 minutes until desired thickness. Stir frequently and scrape bottom of pot to prevent burning.
Optional (for a real "nacho cheese" experience), after cooking, stir in diced tomatoes, green onion, cilantro, or pico de gallo, or cooked soy crumbles with taco seasoning.

Great ideas. Thanks everyone. I have a bunch of those things on hand. Maybe I'll just let them choose. I think artichoke hearts, spinach, onion and 'shrooms all sound great.

I am trying to simply avoind cheese, even in vegan form, just to get used to the idea that it is not necessary to throw cheese in and on everything. I am discovering how food really tastes.

Lani, I make the dough in my bread machine set to the dough cycle. It makes enough for 2 crusts, so I just cut in half and throw the second in the freezer. A couple of weeks ago I made a cornmeal and whole wheat crust that was wonderful, and also a straightforward whole wheat.

Cornmeal dough
1 cup warm water
1/4 teaspoon salt -- optional
2 1/2 cups all-purpose flour -- divided (I used 1/2 whole wheat)
1 cup cornmeal -- plus
1 tablespoon cornmeal -- divided
2 tablespoons sugar or honey (or agave)
2 teaspoons active dry yeast

Measure carefully, placing all ingredients except 1 tablespoon cornmeal in bread machine pan in order specified by owner's manual. Program basic dough cycle setting; press start. Remove dough from bread machine pan; let rest 2 to 3 minutes.

(use the 1 T cornmeal on the baking dish or pizza stone before placing dough for baking)

Now, what's your trick for getting your crust out inot shape. Rolling? Tossing? Laughing I always get frustrated at this point because it keeps springing back into a small round!

Another thing that is important to shaping it is to abide by the resting time in the recipe you use. It lets the dough relax a bit so it isn't quite as resistant to being stretched and shaped. If it's over-worked, it will also tend to want to shrink back into itself instead of stretching. It will always want to shrink back a little but there's a definite difference with how it acts.

My husband makes me vegan pizza and he uses Gimme Lean faux sausage. Although in my previous meat eating life I wasn't big on sausage, I love the vegan pizza version.

First, after the crust "rested" as was suggested (30 minutes out of the fridge) it was easy to work with. I used vegan pesto (which was a bit too salty for pasta, but just perfect for pizza), thin slices of red onion, sliced 'shrooms, diced red peppers and tiny chunks of artichoke hearts. It was a hit!

I just made the vegan lasagna (yum) from Veganomicon and had some cashew ricotta left over. We're making pizza tomorrow and I plan to put a little bit of that on the pizza. It doesn't really melt, so I'm just going to spread it on the crust before I add the sauce and toppings.

For a slightly different topping, one of our favorite pizza places makes a parsley/potato pizza - vegan by default. It's an unusual combination, but it works.

I just went to look up the cashew ricotta recipe. Alas, it's tofu based and I don't get along with tofu very well.

The search for a non-dairy, non-soy, ricotta continues...
