Great plan BUT needs more greens

Hi All, I am a Health Coach. I have several followers on the 21 Kickstart program. It looks like a great plan. My only recommendation would be more greens,cooked less and eaten at every meal. I find there are alot of beans which are really hard for people to digest (this is due to a coating on the bean to protect it). Soaking them is helpful but even still they can be tough. Adding lots of green leafies to your plan can help keep things moving, give you even more energy and keep your alkaline.

I have been juicing greens and adding more veggies to my plan.

Hi Laura!! I am a health "coach" too, did you go to IIN?

Susan Levin, R.D. and I designed the menu and we thank you for your comment! It's been an interesting task to create a menu that someone trying this diet for the first time will be able to transition to. So, as much as greens work for you at every meal, (and wouldn't our world be different if everyone ate more dark leafy greens?!), we created a very well-rounded menu where people can feel free to use 100% or as a guide. And, it might not be apparent from the name of the recipes - but a lot of the menu calls for a green (or more than one) component almost every day!

Let us know if you have any other thoughts on the menu or anything else as we move forward.

Yes. I went to IIN. I am in Immersion right now. Love it! INN is great. I understand where you are coming from. I had a women, actually an IIN student I was coaching the other day who told me she was an unhealthy vegan. I guess the point is that it is easy to be an unhealthy vegan. My husband told me he went to the health food store and got a bunch of vegan treats. I guess you can take the vegan out of the nosher but not the nosher out of the vegan. That is why I was pointing out that more raw leafy greens be a part of the program. It helps to keep blood sugar levels in check and helps keep people full. I know for those making a drastic change introducing things slowly is best. Is there a part 2 to the program? After the 21 days? Meanwhile the site is amazing and I am thrilled, but not surprised that an IIN student is part of this wonderful program. Keep up the amazing work. I have about 10 people with me on this. Interesting you should bring this up. I did Kickstart for the 1st time in January. I made the March Kickstart goal to incorporate more greens. In fact, a couple of days ago I started a thread asking for new green receipes. I didn't get a huge response but I did get some great ideas.

On another thread I ask about Oxalic (I think that is how you spell it) acid. This is mentioned in Alica Silverstone's book. She says that certain greens interfere with calcium absorption such as chard and spinach. I had hoped Jill or Susan would address this but I never heard anything back (Not like there aren't a lot of Threads to go through or anything). What are your opinions about this?

Do either of you have any great green receipes other than what are on the MD website?

Eating a large salad before lunch and dinner has helped me consume more greens & also helps to fill me up before the main dish. Often times, the salad turns in to the meal, with the addition of beans, nuts, veggie patties, grains, etc.

It is Oxalates that interfere with calcium. Cooking them with an egg, but not consuming the egg, helps bc the egg absorbs the oxalates. I don't have a calcium issue but there is calcium in other green veggies like broccoli.

There is an amazing cookbook out by a fellow graduate of mine called "Clean Food" by Teri Walters. Delicious recipes for greens. I make them so many ways. You can't really mess it up. I like to use Indian spices, like tumeric, cumin seed, coriander, cinnamon.They are all so great. I using saute in a big stir fry pan with grapeseed oil or olive oil. Then I add the spices. Experiment. Also, don't kill your veggies. Cook so they are bright yet firm.
