Hi, just was curious on this menu and we mix it up and choose and eat most anything from them in any given day? Is it balance out or can I wing it a bit. Like Vegan waffles with almond butter, banana and real maple syrup for example then lunch do the couscous confetti salad with vegetable barley soup, then take the simple bean tacos and corn salad for dinner? Are there too many carbohydrates? Am I out of balance?

The menu is a guide basically to learn how to eat vegan. If you have been vegan for a while and have done kickstarts before, lots of us are using it as a guideline. You can mix and match. Just make sure you have a variety.

Hi I'm Farrah and am new to veganism and doing this new kickstart with my husband. He suffers from high cholesterol and we both have about 20 lbs to lose to be happy with our bodies. We are excited on our little journey! This forum looks like a great resource.

Hello from Sunny CA!
My husband and I saw the Forks over Knives documentary on Netflix last week and we ordered the getting started book set, which includes the 21 day jumpstart book.
We are very excited to start a plant based diet. We will slowly transition ourselves into this as we have some food we need to use up as we do not want to waste it. I have my grocery list full of delicious fruits and veggies and tons of recipes to try out.

Hello all! I decided to try out the kickstart because my fiancee turned me on to Forks over Knives which ended up being the last straw to convince me to start cutting out meat and dairy from my diet. We both plan on getting married in 13 months and both have more than a few pounds to lose.

I'm 35 and weigh 365 pounds and really needed some motivation to finally get healthy. I've weighed over 200 pounds since I was 15 and would really like to be healthy so I can start a family and see them grow up as well as have the energy to keep up with small children.

I have no fear of trying new foods and love to cook. I'm thinking of this as both a health challenge and as a challenge for my cooking skills! Hopefully if I can master the latter the former will fall into place.

When all else fails, read the directions.

9-16-2011 - I am on day 9 of the 21 day vegan kickstart. I am so in love with the food and recipes. They have made it so easy to make the change to a vegan lifestyle. I can't thank you enough.

I have one question though, do you post a different 21 day vegan meal plan every month? I am concerned about Thanksgiving, Christmas, etc.

Just found this site threw facebook.

How we found our way here....A few years ago my wife failed a stress test Shocked and had 2 way open heart surgery that day. No heart attack or heart damage so I guess you could say it was the best way to get open heart surgery. When we went in for her 1 year check up with her cardiologist he was telling us that typically people end up going threw this again in their life time......then he said.....if you went vegan...... I would never see you again. Those words have stuck with us!

My wife and I are on day 4 of eating vegan. We are doing well and feel great but cant wait to feel 100@ after detox. We both have had slight headaches since day 2. How long does this last?

Of coerce since letting people know about our healthy eating choice we have been told by many that.....they will cook a big xxxx for us....bla bla bla. Laughing

What we have found interesting is friends who contacted us privately that had been veg for years. They have been great support and inspirations for both of us.

Hi, everyone...I'm a little late posting here, but better late than never. Very Happy. I'm 37 yo and am a diabetic. Quick history...was a lacto-ovo vegetarian for 15 years, then at the age of 30, I started eating meat. Gained 60 lbs ( from a size 6 to a size 16) and developed T2 diabetes. Not sure if this was because of the meat, but I'm sure my high fat, cheesy diet didn't help. Sad. I've managed to lose about 40 lbs by going back to eating vegetarian, but I decided to go vegan after reading Dr. Barnard's book and watching the PCRM DVD about reversing diabetes. I was also inspired by the films "Forks Over Knives" and "Food, Inc." I'm hoping that as my body loses more weight, my insulin resistance will improve and so will my tolerance for carbohydrates.

Glad to read everyone's intro...thanks for letting me share.

I've been a vegan for a year, beginning with the Sept. 2010 Kickstart. I never had digestive problems before but have been having problems with excessive gas increasingly over the past year. It is now a daily problem. I've tried a few weeks without soy & a few weeks without wheat but neither seemed to help. Any suggestions?
