B: usual cereal, plant milk, chocolate chips L: hummus and veggie wrap on a whole wheat tortilla (hubby made a fresh batch of tortillas yesterday) D: I think hubby is going to try a "tuna casserole" using whole wheat pasta, peas, chickpeas, and the not-cheese sauce. But, that is still up in the air, he usually doesn't finalize things until lunchtime S: fruit Still working on dealing with the evening munchies - usually around 8:30 I want something to nibble. If I'm not careful, I just grab a bit of this and that and end up eating more than I really need to. Sometimes a piece of fruit satisfies but sometimes not. I'm trying to figure out triggers and what satisfies without going crazy so I can be prepared. --Deb R

I think it is mostly boredom, because I'm not really hungry. Usually I am happy with a small bowl of cereal. Today for me B: steamed shredded potatoes with spinach and oninons s: blackberries and maybe 1/2 banana l: leftover wild rice / brown rice topped with stir fried veggies and tofu s: maybe air popped popcorn d: not sure yet. Probably a baked potato with some sort of veggie concoction. I'm going to play it by ear tonight. I am the queen of frozen veggie mixes.

Yeah, I had bad day yesterday. I "thought" I could snack on some almonds but that turned into somewhat of a binge. I woke up feeling pretty icky today, so I'm back on as of right now. I have to stay away from nuts, apparently. B: oatmeal, apples, cinnamon, flaxseed, almond milk L: couscous confetti salad S: banana D: carrot/red pepper soup; salad with beans and homemade dressing (cashews, balsamic, shallots, dijon) S: more fruit (if needed)

I try to save cereal for times when my blood sugar is running low before bed - I know that it will be just enough without spiking overnight (dawn syndrome is a problem for me). Sometimes it is boredom - and I can usually deal with that by finding something to do. But, sometimes I do feel physically growly-stomach hungry. I know that I won't be able to sleep if I'm really hungry so I want to have something. I'm just trying to sort out things that are vegan, low glycemic, and satisfy the various levels of 'hungries' - sometimes I want sweet, sometimes crunchy, sometimes savory, etc. For example, sometimes a handful of multi grain crackers and hummus with a glass of water works great. Other times it leaves me wanting "something". I used to make a 'trail mix' of nuts, dried fruit and maybe some chocolate chips but the dried fruit and chocolate is too much sugar, the nuts are high fat, so I've been avoiding that lately and looking for a better option. I'm not terribly fond of popcorn or I'd just go with that. Maybe tonight I'll try making a strawberry banana shake with almond milk and see if that works (if I get snackish). --Deb R

B: Granola, banana and almond milk L: Veggie stir fry D: Not sure yet, though we didn't eat the kale I said we were going to eat yesterday, so that's definitely part of what we're eating tonight.

Bugsmom For my night snacks I allow myself some variety, I create a little menu, so when munchies come, I get to select from my snack menu: - Baby carrots and Hummus -1 sliced apple with 1 teaspoon of Peanut or almond butter - Bran cereal with soy milk - bole of vegetable soup Brigitte

We make a weekly menu of dinner options (so we can grocery shop efficiently) but I could also make a menu of 'good' snack options as well (and make sure we've got the fixin's for them handy) --Deb R

Had my usual museli with soy milk for breakfast, Just cooking some chickpeas - have to make some more hummus and this afternoon I'm going to a church meeting where they are having turkey dinner so I'm making a pasta salad and will add some chickpeas and a whole bunch of other veggies. When I RSVP to these functions I always say I'll be there but because of the food I will bring my own. Many applaud my food choice and I have shared my salad but I find it easier to bring my own. For lunch I'm going to have leftover rice and veggies.

I think the meal plan is nice but too low in calories for me (I work out a lot), so I'm getting ideas from it but mostly eating my own food. Today's menu is: Breakfast: 2 ww tortillas with almond butter, banana, and granola Snack: orange Lunch: tofu wrap with avocado, hummus, veggies (carrots, zucchini, mushrooms), berries on the side Snack: almond milk yogurt Dinner: Vegan burger on Ezekiel english muffin with hummus, avocado, tomato. Big salad including spinach, kale, beans, almonds, various veggies

i am a night snacker too. I have realized if i eat a bit later.. like 6:00 pm and something with beans.. then i am fuller later and don't always snack.. If i do snack i take a small bowl of chips, not the bag. When i am scooping out the chips, i am thinking 10 of them is 180 calories. So that helps keep it to a small portion. Most times that does it.

Change of dinner plans - we've got some kale that needs to be used so we're going to have quinoa chickpea pilaf with braised kale for dinner and then maybe a strawberry banana cocoa shake for a snack later on (it's not really a smoothie so much because it's not as thick, just fruit and almond milk) --Deb R

cch22 wrote: deb.. how do you make braised kale? Cut up the kale (remove the stem or not, up to you :lol . Heat water and a bit of soy sauce then add the kale and cover. Cook just a few minutes until it's just barely warmed and slightly wilted but still vivid green. I'm not sure if hubby adds onion or garlic in with the braising liquid. DS (almost 13 yrs old) just popped in and asked me what we're having for dinner. I told him we're having quinoa chickpea pilaf and braised kale and he said...wait for it....Sounds good! --Deb R
