I would also suggest keeping things like canned beans, tomatoes, and corn on hand, and some frozen veggies. You can always throw together a meal with those, and don't have to buy a lot of new and "strange" foods. Then you can try adding in new things as you go along. Also look for canned soups with no meat and dairy. I know these are probably not the perfect foods, but are a step in the right direction for someone who is struggling with all the changes. I haven't been doing too well with the eating plan myself this week. I have eaten vegan, but not as healthy as I would like. Haven't had time to cook and have been munching a lot on vegan-but-not-super-healthy snacks. Trying to be better today ... brought fruit for an afternoon snack. I hope to get some beans and soups cooked tomorrow for the coming week so I don't have to rely on those quickie foods, and am looking forward to trying out some of the recipes from this program that I haven't gotten to use yet.
