Starting late ...

I've tried going vegan many times now, but never seem to make it past one day. It's really frustrating, and makes me feel disappointed in myself, since I've only got to go buy a bunch of new foods and follow the recipes to make it happen. For some reason, the shopping thing overwhelms me and I find myself running out of things to eat at home. BUT enough excuses! Today's a new day (well ... tomorrow, actually! *LOL*). I'm DETERMINED to make this happen, and hopefully starting on day 4 will still be much better than not at all. Thanks for reading, and best of success to the rest of you!!

I started the January kickstart 4-5 days into it as well and I'm still doing it. Don't give up....or beat yourself up. You are right tomorrow is a "new" day. This is a great place to get support and encouragement. I too, had tried to get back on the vegan diet on my own and just couldn't seem to get it together. Thank God for the 21 day Kickstart and all who have contributed to make it a success.

It gets easier as you go along. You've come to the right place. Best of luck to you..........you can do it!!!!

Everyday is a chance to do better and be good. To avoid having nothing to eat...I make big pots of lentil soup, bean soup or borscht and I keep them frozen in individual servings...3 minutes in microwave and there you go...vegan meal in minutes Cool

Beaners, it is hard. Especially if you're used to grabbing food on the go and not cooking at home. Since I started this I became more aware of how "meat-centric" the world is. Hang in there! Marge

I would also suggest keeping things like canned beans, tomatoes, and corn on hand, and some frozen veggies. You can always throw together a meal with those, and don't have to buy a lot of new and "strange" foods. Then you can try adding in new things as you go along. Also look for canned soups with no meat and dairy. I know these are probably not the perfect foods, but are a step in the right direction for someone who is struggling with all the changes.

I haven't been doing too well with the eating plan myself this week. I have eaten vegan, but not as healthy as I would like. Haven't had time to cook and have been munching a lot on vegan-but-not-super-healthy snacks. Trying to be better today ... brought fruit for an afternoon snack.

I hope to get some beans and soups cooked tomorrow for the coming week so I don't have to rely on those quickie foods, and am looking forward to trying out some of the recipes from this program that I haven't gotten to use yet.
