New and Have Teenage Sons

Hi! I'm new to going vegan and I am a parent of two teenage boys. In looking at the recipes, I notice that they are very low in calorie. Can anyone give some recommendations for the teenagers? There is nothing worse than hungry teens! Thanks!

I would not suggest trying to live off of one serving of each recipe recommendation, teenage boy or otherwise. You should eat as much as you want of these healthful foods. And be sure to supplement with sides and snacks that follow the guidelines.

Welcome! How wonderful your sons are participating. The internet is full of vegan recipe sources. If you can get them to help with the cooking, that would be great. Maybe they could help with selecting recipes. Others here may suggest some specific sites that would appeal to your sons. Jean

Welcome. I'm sure some of the parents have suggestions. I know my husband eats at least double what I do, and really likes hearty things like bean/veggie stews, pastas with lots of veggies in the sauce, chilis, and casseroles like shepherds pie. He also likes grilled portobellos as burgers, veggie tacos with beans and grilled peppers, and he loves seitan and patties using wheat gluten, like the Veganomicon chickpea cutlets. You might like Nava Atlas's vegan cookbooks. She has two sons and talks about how they eat at home and which recipes they particularly like. Hope that helps!

Thanks for all the responses. I found the recipe for Hearty Chili Mac which should be perfect for the whole family. I will go through the recipes and calculate what our individual needs vs. # of servings. Thanks again! I'm curious to see how my sons feel (physically and mentally) once they are solidly eating this way. Lorrie

You may try encouraging your sons to try a variety of foods, which will be easier if you can also enlist a couple of their friends. Potatoes and beans are the most satiating foods, followed by whole grains. Refined and processed foods lack fiber and are not nearly as filling. Instant oatmeal is an easy snack. Keep baked potatoes in the refrigerator or roasted or boiled potatoes. Best of luck. My daughters chose to become vegetarian at ages 11 and 13, and decided to go vegan a few years later. We are all still reaping the health benefits as this diet is so easy to follow. They have brought several friends down this path over the years as well, and their commitment grows as the benefits of this diet are so apparent.

Actually my sons eat a variety of foods and have always been good eaters of veggies and fruit. The issue is more of quantity than quality. Teenage boys eat an enormous amount of food so I want to make sure that they are satisfied and happy. That way this will stick with them and they also won't go for junk food to fill in the gaps. My son is 6'5" and 200 lbs football player. He likes the chili mac. He eats the "meat" crumbles in chili and spaghetti sauce with no complaints. He really loves polenta. I fry it in veggie spray and top it with marinara. I even cooked a boca burger the other night and he ate it and liked it. Of course he still eats 4 double cheeseburgers from McD (yes all at the same meal) when he's out in town. He loves his brisket, but I've found that he eats anything, I mean anything (except veggies that are obviously veggies, he's gotta be tricked on that).

Lori--You really made me laugh about your son! It's really ironic, I just made the chili mac last night for the whole family and they loved it! It's a keeper meal. It's filling and tasty. It's a challenge trying to keep the food flowing for the boys! Lorrie

Thanks Lorrie! Another cool thing. When my son and half the HS football team were home from college this holiday season, (I still can't seem to get rid of them!), they ate so much black bean dip with tortilla chips I couldn't believe it. I just rinsed canned beans and mixed with salsa in the margarita mixer (blender!) and they thought I was some kind of crazy good chef. I still couldn't get them to try the homemade hummus, but they went nuts on the black bean dip. It's great when you're watching football. And I even had the audacity to put out fresh cut veggies like celery and red bell peppers. They ate that too. Maybe they don't actually look at what they are putting in their mouths?!
