Posted Monday, September 20, 2010 at 12:39 PM If you like avocados and haven't thought of making it with pasta, I'd like to recommend it. I make this very simple "Avocado Cream Pasta" recipe from the PETA website http://www.peta.org/living/vegetarian-living/recipes/avocado-cream-pasta.aspx, but there are others out there with more healthy doctoring I'm sure. We've got a couple avocadoes in the fridge (so they don't over ripen) - maybe we'll give this a try sometime this week. --Deb

They have a pasta/avocado dish that's called Avocado Delish. It is AWESOME. When we are there for vacation I'll eat it at least 3 times in 10 days. It's vegan and you can add chicken if you like. Posted Friday, September 24, 2010 at 10:37 AM From the Peta site: 2 avocados, pitted and diced 1 clove garlic, minced Juice of 1/2 lemon 1/4 cup unsweetened soy milk 1/4 cup water Salt, to taste Red pepper flakes, to taste Cooked pasta •Combine the avocados, garlic, and lemon juice in a food processor. As the mixture is blending, add the soy milk and then the water. Add more or less water depending on your desired consistency. •Add salt and red pepper, to taste. •Toss with your favorite cooked pasta and serve.
