Easy & so delicious!

Hi all - here's a quick and easy lunch/supper dish. I've put the "original" recipe first, then my modifications below. It's YUM. 1 cup uncooked rice 1 cup garbanzo beans 1 cup peanuts or cashews 1 cup raisins or currants Dressing: 1 Tbsp curry powder 1 Tbsp cider vinegar 1 Tbsp honey 1 Tbsp prepared mustard 1 Tsp worcestershire sauce Cook rice. Mix dressing well then combine all ingredients together. Can be served cold or warm. My modifications were: Used 1/2 cup brown rice and 1/2 cup quinoa Used 1/4 cup dried cranberries and 1/4 currants (reduced dried fruit by 1/2 cup) Omitted nuts but included onions, mushrooms and orange pepper (oh and threw in leftover peas) Used pinto beans instead of garbanzos Used pepper and a bit of water instead of the Worcestershire sauce (contains anchovies). Used agave syrup instead of the honey The dressing is wonderfully fragrant and so delicious. This dish was so quick and easy and I've got leftovers too! Enjoy!
