"meatball" recipes?

Hello! I'm newly vegetarian (2 weeks), newly vegan (4 days), and new to the Kickstart. I'm Italian and LOVE pasta. I have found eggless whole wheat pasta and am eager to try it but was wondering if anyone had any good vegan "meatball" recipes? Also - anyone have any good homemade veggie burger recipes? I live in London and am having a hard time finding vegan pre-made veggie burgers at the grocery stores, all that I have found so far have eggs. Thanks!

You could try these, they are not nutritionally analyzed, and with the walnuts and tofu, you'll want to watch your fat and serving size. Tofu-Walnut “Meatballs’ Makes 4-6 servings 2 cups chopped walnuts 1 chopped onion 1 shredded carrot 1 chopped green pepper 4 cloves chopped garlic 12 oz soft tofu Mustard Oregano Basil 2 cups vegan bread crumbs Saute walnuts, onion, carrot, pepper, and garlic. In large bowl, mix cubes if soft tofu with mustard, oregano, and basil and sauté ingredients. Add enough breadcrumbs to make a moldable mixture. Shape into balls and sauté in vegetable oil cooking spray.

Veggie Burger recipe: Ingredients 1/2 cup uncooked brown rice 1 cup water 2 (16 ounce) cans black beans, rinsed and drained 1 green bell pepper, halved and seeded 1 onion, quartered 1/2 cup sliced mushrooms 6 cloves garlic, peeled 3/4 cup shredded mozzarella cheese 2 eggs 1 tablespoon chili powder 1 tablespoon ground cumin 1 tablespoon garlic salt 1 teaspoon hot sauce 1/2 cup dry bread crumbs, or as needed Directions 1.Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 45 to 50 minutes. 2.Preheat an outdoor grill for high heat. Lightly oil a sheet of aluminum foil. Mash black beans in a large bowl with a fork until thick and pasty; set aside. 3.Place the bell pepper, onion, mushrooms, and garlic in the bowl of a food processor, and chop finely. Stir the bell pepper mixture into the mashed black beans. Place the brown rice and mozzarella cheese in the food processor, and process until combined. Stir the mixture into the black beans. 4.Whisk together the eggs, chili powder, cumin, garlic salt, and hot sauce. Stir the egg mixture into the black bean mixture. Stir in the bread crumbs, adding additional bread crumbs as needed until the mixture is sticky and holds together. Divide into 6 large patties. 5.Place patties onto the prepared foil, and grill until browned and heated through, about 8 minutes per side.

That'd be vegan mozzarella, yes? Could probably use a firm tofu instead (if soy is okay). We usually just use our black bean patty recipe from the Veganomicon with the caveat that we only make as many as we're going to eat for that meal - if they sit around in the sauce for a day, it tends to get a bit mushy. --Deb R

Uh oh!!!! Mozzarella Cheese & egg are not part of the kickstart diet!!!! Can you find a substitution for them? I had a meatball recipe using walnuts and mashed potatoes. All of my carnivore friends loved it, too. Will try to find it.

In fact, isn't one of their advertising notes "Made from real eggs"? Still not vegan. Ener-G Egg is a vegan egg substitute. Or, you can use ground flax seed and a little water, or corn starch and water, or just a little plain water, depending on the application. --Deb R

Cherokee925, what do you substitute for the mozzarella cheese and the eggs and still get the right taste and consistency? Would you please edit the recipe ASAP. My new vegan heart attack heart diet will not take the fat or cholesterol.

Veggie Burger recipe: Ingredients: • 1/2 onion, diced • 1 can black beans, well drained • 1/2 cup whole wheat flour • 2 slices rye or pumpernickel bread, crumbled • 1 tsp garlic powder • 1 tsp onion powder • 1/2 tsp seasoned salt • salt and pepper to taste • Pam spray for cooking purposes Preparation: Sautee the onions till soft, about 3-5 minutes. In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, adding the flour a few tablespoons at a time to combine well. Mixture will be thick. Form bean mixture into patties, approximately ½ inch thick and spray the pan and cook over a low flame until done. Make veggie burgers and enjoy!

I just typed in this whole recipe and then lost it!!!! Arrrgggghhhh! Will try again. Here is my burger recipe based on Rip Esselstyn's. 1 can black beans rinsed 1 can diced tomatoes 1 minced garlic clove or 1 tsp garlic powder 1 tsp onion powder 1 cup chopped carrots (I grate 1 to 2 carrots using a Salad Master) 1 cup parsley or cilantro 1/2 jalapeno pepper or 1/4 tsp red pepper flakes (optional) 2 cups quick rolled oats (important to use quick oats not old fashioned oats - holds together better) salt & pepper to taste (optional) Preheat oven to 450. Place first 7 ingredients in food processor then place in bowl and stir in oats. Form 8 patties. Place on parchment lined baking sheet and bake for 10 minutes. Turn oven to broil and cook for 2 to 5 minutes more - watching carefully - until burgers are nicely browned.
