Ok lets try this again........Speaking of January Kickstart menu........did anyone have success with the Oak Bananna French Toast. Mine was a disaster! It completetly fell apart. I followed the directions instrucing not to let the bread sit in the mixture but it still fell apart. Any suggestions? (quoted from Bluesgyrl)

I did the Oak Banana French toast in January and don't remember having this problem with it but now I've cooked the Blueberry Buckwheat Pancakes three separate times and haven't gotten much better in keeping them from sticking. I love the taste, maybe a little gritty texture but sure couldn't feed them to company--or even the rest of my family. They just haven't come out "Pretty."

Here are things I found have helped. Make much, much smaller than 3". I finally took a teaspoon (table setting size, not measuring spoon size) of batter and put that onto griddle. I sprayed my non-stick griddle with cooking spray and the top and bottom of my spatula. I didn't this many times so I wonder how much oil I ended up using!

In this case small was really best.

I just came on to ask about this very thing.... My pancakes would NOT flip.
They smushed up and fell apart every time I tried to flip.
I tried less blueberries.... I tried a lower temp on the griddle.
I tried using vegan margarine instead of a spray of vegetable oil.
With my last batch - still on the griddle - I tried to scramble it all up and see what would happen.

I'm just glad I'm not the only one.
