What R U eating Friday April 8th?

hi all,
yippee yahooo it's FRIDAY!! and the SUN is shining.. it's supposed to hit 80 on Monday!! wow i can't wait to get outside..maybe take the kayaks out..

haa haa this month is my month to plan the family outing. (sister-in laws & husbands) So i planned private ballroom dance lessons..hee hee that's tomorrow. cross your fingers for me. No beer and my husband dancing.. maybe i can win the funniest home videos. - just teasing. Actually the camera should be on me.

Anyway. today is a bunch of leftovers...
breakfast..oatmeal & bannana (i can't wait till my jaw isn't sore and i can go back to cereal)

lunch..pattie & asian lime cole slaw
dinner.. not too sure..it is either leftover red beans & rice or a new recipe out of the BIG book of Tofu. That would be stroganoff made with tofu (for the creamy sauce) red pepper, and 4 cups of mushrooms over whole wheat pasta.

so what are you eating today??

Oooooo, yummy - strogonoff! What else is in that tofu cookbook - that sounds like something I'd like to see.

s: slice of bread before workout (woke up at 5:30 - very unusual - stomach growling at 8:00 also unusual)

B; Oatmeal
L: leftover couscous salad (maybe need to add beans if still hungry)
D: homemade veggie pizza ?

Today is Grocery Shopping day...LOVE that!

B: Homemade Almond Bread with Peanut Butter and 1/2 Banana

L: will be on the road, will bring my lunch/ Tofu stir fry with Green Peas and Brown Rice

D: Vegan Sheppard Pie

cch22- Ball room dancing that sounds like a great time!

B- oatmeal, maple syrup & strawberries.
L- bean & salsa on corn tortillas and spinach & orange salad.
D- who knows??? Something fun and creative.

My husband and I are absolutely on-board with going vegan for health & weight reasons.

Cooking is my hobby but the no fats or animal product makes this quite a challenge. I'm a very creative cook so I can't follow any recipe to a T. I have to add of my own little something-something to it or it's just too boring!

@ laurabeth.. i totally agree about haveing to add something something to a recipe.
Usually the first time i make a recipe, i make it as directed.. then the next time i tweak it. Like confetti couscous..to us is better with the BIG couscous, reminds us of tapioca.
also we tend to like spicy.

Beautiful day - sun shining and we are seeing our first robins.
Breakfast - muelseli with soy milk as usual
Lunch - leftovers
Dinner - we're going out for dinner and they're making a vegan chili for us. I'm taking hummus and crackers for snack and also some bread which I made.

Went shopping yesterday - mmmm - love the fresh fruit and veggies.

Juiced this AM - YUMMY!

B - Dragon fruit
AM snack - Banana maple oatmeal with flax
L - Quinoa, red beans and mixed veggies.....YUMMY!
PM snack - hummus and a few rye crackers
D - not sure yet (maybe "cream" of broccoli soup)

cch22 - Asian lime coleslaw...mmmm...Recipe?

Any how,

B- Toasted 7 grain Sprouted Bread w/Earthsmart? Butter and Orange All fruit

L - Leftover Curried Lentil soup

S - Berries and some celery sticks and hummus

D - Going out for my daughter's B-day. I think Italian... so probably Pasta with Marinara sauce or something like that Smile

Ballroom dancing sounds nice---I have no coordination but I hope to take dancing lessons to see if even I can danceSmile.

I woke up late and went for brunch: vegan pizza. I got ww crust from Trader Joe's and took just a portion of it and flattened it out. Topped it with FF TJoe's pizza sauce, roasted red peppers, artichoke quarters, and some broiled eggplant. It turned out good--filling but not too filling I think I would add some garlic next timeSmile.

Dinner: tonight we go out for Mexican. I'm thinking veggie fajitas, no cheese or sour cream, and with corn tortillas.

Be prepared...

Happy Friday Kickstarters!!! Very Happy
For B- I had my ususal Lara bar (Banana Bread) and some green tea
L- My manager is taking our team out for lunch to a Thai place. So definitely will get a curry with veggies and some brown rice
S- Maybe some green tea again
D- I will either cook some vegetable with Indian bread chapati or if I am feeling too bored, will go out to this Mediterranean Place called Garbanzo (You can get a customized falafel plate with veggies, hummus, whole wheat pita and different selection of vegan sauces)

The one area where I'm concerned about staying on track is when I'm at someone's house and they cook for me. I hate refusing food that someone has taken time to prepare. So far I haven't had to deal with it, but does anyone have any suggestions?

Last night I did visit with a friend, but fortunately she is vegan so while we ordered regular pizza for the kids, we got ourselves a yummy vegan pizza with lots of vegetables.

Today's plan:
B: Bob's 10 grain hot cereal w/agave nectar, walnuts, cinnamon, dried cranberries, almond milk

S: Lydia's raw bar

L: Tofu, rice, veggies, salad

S: hemp protein shake w/almond milk, berries

D: Since I had pizza last night, I'll eat the butternut squash with marinara that I had planned for yesterday.

Snack - Almonds
L - Cuban Black Bean Soup, tiny portion of kidney bean and rice salad that was too much to toss and too little to save; baggie of raw carrots; banana; pear.
D - Quinoa Pilaf and some kind of vegetable.

Looks like an awful lot of food for my lunch, doesn't it ... but I am losing weight.

@sweens..
there are a few options.
1) take a dish to share. This is probably the most common. That way you know what is in it, that you like it and you are not putting the hostess out.
2) just tell the hostess you eat a plant based diet no meat, or by products, or dairy. If she is comfortable with that and wants to give it a whirl ok. She or He might even ask for a recipe.
3)If it happens last minute suggest ordering in so you can order what you want.
4) when all else fails realize it's not the end of the world, make the best choice out the choices available. NOt everything is ruined. you might get all bloaty and full but you can go right back to your routine for the next meal. if pressed with hard choices i might go as far as vegetarian (cheese lazagna) .. but i have no desire for meat. Time to go. Meet you later.. Gotta pick up the dry cleaning, i'll be right back.

who needs food? pass the wine. Laughing haa haa not really. i talk a good game, but that's all it is.

B - *Leftover Lentil Soup, organic whole grain bread with Earth Balance, decaf black tea

L - Smoothie (soy yogurt, mango, berries, kale, v. protein pwd)

S - rice cake with avocado, cup of miso

D - Brown Rice with red curry tofu and veggies

S - popcorn

* I eat soup for breakfast often. It gives me lots of energy

I like being able to post my daily menu. It gives me more motivation to stay on track. I'm happy to be on day five! I might reward myself next week by checking out the Vegan pizza place in town!

Suggestions? Yes - tell them up front that you have just started a "new diet" and you're not eating any animal based foods "for now". However, you'd really (a) love it if s/he made her/his "famous" (whatever - many people already make vegan meals and just don't realize it) and (b) you'll bring (something) to add to the fun. What does the host make that is awesome - and vegan? Maybe even suggest that you all do something "fun and simple" like make your own pizzas. Host can make or buy pizza dough and provide sauce (and cheese for non-vegans) and everyone contribute one (or more) favorite toppings. Easy, casual, and to each his own. Bring along a yummy apple streusel mix (diced apple, chopped pecans or walnuts, cinnamon sugar) to make a 'dessert pizza' for everyone to share. Yes, it's not low glycemic but when you're eating with non-vegans, you're looking for stuff that's tasty to them while vegan for you. Or, if the host does make an awesome veggie soup (with veggie stock, not chicken) or ratatouille or something, suggest that - and offer to bring a dessert (and make a big plateful of vegan cookies or something). Or, suggest a potluck - each guest bring a dish to share...it makes it 'easier' on the host to not have to do all the cooking.

Maybe it's just me, but I have no problem letting people know that I have food "requirements" - I'm a type 2 diabetic and hubby has high cholesterol and high blood pressure (and I have nasty reactions to most artificial sweeteners so folks who think they're being "nice" to me by buying a 'sugar free' dessert really aren't helping any). In this day and age of celiac, diabetes, and allergy awareness, it's only polite, as a host, to check with guests (at least that's my opinion and I'm sticking to it... Razz ) And, along with that, it's only polite, as an invited guest, to let the host know of special needs - it can be embarrassing to make a wonderful cheese lasagna only to find out that one of your guests is lactose intolerant and can't eat cheese! I'd much rather know beforehand to arrange something - either a totally cheeseless meal, or two lasagnas - one with cheese and one without. (Fortunately, we had a bunch of leftover veggie chili in the fridge so I heated some of that up right quick and the meal continued, everyone else loved the spinach lasagna - not vegan at that time. A few weeks ago, though, we had guests and hubby made a vegan lasagna using black bean crumbles, almond milk ricotta, spinach and mushrooms.)
