I am planning on either making or buying a whole wheat pizza crust..
then.. veggies.. tomato slices, mushrooms, broccoli, spinach, red peppers, red onions .. maybe some olives and lots of garlic.. really looking forward to it..

anyway my question is .. how do i do all those veggies and not get a soggy crust? do you precook the tomatoes, mushrooms, and peppers?

I use a pizza stone, and cook the pizza in a very hot 500 degree oven for 8 - 14 minutes (average). I don't pre-cook the veggies, but I do cut them small to medium in size,so they cook and maybe brown a bit, but don't burn. You have to watch it closely so it doesn't burn, so at 8 minutes test it. If the crust still feels soft, go for another minute, and so on. It depends on how thin you make the crust as well.

It is an art! Not a science. Wink

you can do a quick sautee on the veggies if you like sauteed veggies but that's not required. As was said, put a baking stone into the oven and heat that, then put the dough on it, and bake the crust alone for a couple minutes, then add toppings and finish baking.

A fun alternate is to put a rack over the grill or a campfire, put toppings on a whole wheat or multi grain tortilla, then crisp the tortilla and heat the toppings over the fire.
