I rarely (one or two in my entire life) have coldsores and since starting the Vegan diet I have had 2 - any suggestions - from the diet or just a coincident? I also find that I can't get my beans to cook - what am I doing wrong? I soak, I boil and boil and boil - far more than the package says and yet they just don't get done. I told you I couldn't cook but this is ridiculous.

Jasmine, I don't know about the coldsores, but it's probably coincidence. I can't think of any reason why beans, fruits, veggies or whole grains would aggravate them. Unless maybe your new diet is stressing you out a little. Wink I bet they'll get better.

Re: beans--are you salting the water? That can prevent beans (and lentils, split peas, etc.) from getting tender. Don't put salt, soy sauce, or salty seasonings in the water until after the beans have gotten soft. Same goes for tomatoes, tomato juice or anything else acidic.

I soak the beans 6-8 hours or overnight (you can do them up to 24, no problem), rinse, boil in fresh water, and depending on the bean they take 1-1.5 hours.

I used to try the "quick soak" method, of boiling them for 30 minutes, then soaking for 1-2 hours, then cooking again. I didn't find that to be as foolproof though.

Beans freeze well, or keep in the fridge for about a week, so if it's a time constraint, you can do them ahead.

Foods high in the amino acid arginine may be related to the cold sores (the opposite of lysine, which can help prevent them). You should be able to do a search online, but I think nuts are high in arginine. Could also be stress (which may or may not apply right now).

I take L-lysine supplements for my cold sores. I'm not sure if I get more since being vegan or if I was starting to get more as I've gotten older Rolling Eyes I am getting good control with one 500mg tablet every other day.

Have you tried using a crock pot to cook your beans? That's the best method I've found. I just soak overnight, then throw everything together the next morning and leave it on low while I'm at work. It's really nice because when I get home, the house smells great and dinner's already done! Smile

Or you can be lazy like me and just get the no-salt or low salt beans in cans! I just pour them in the collander, rinse off the liquid and they're ready to go. They always go in my salads, and a lot of the time in with the veggies I cook. I've also mashed them up with avocado. Spread a little garlic hummus on my bread, top with the mash, spinach, tomato, a shake of oregano and yum!
